• Saturday, November 10, 2007 - Thanksgiving !!!!!!!!!!

I sat down this morning and retyped my Thanksgiving menu/planner.  Good thing I am a clutter bug and pack rat.  My computer ate mine that should have been stored on there.  I have been tweaking it for 10 years!  Here it is!

Do Ahead!

Cranberry sauce in frig

Skim Cream

Tuesday

Crumble bread

Thaw Turkey

Thaw Ham

Chop onions

Chop celery

Boil eggs

Cook pumpkins

Wednesday

Make Pies

Cook sweet potatoes

Dip

Tortilla Roll ups

Peel eggs

Wednesday Night

Cook Turkey

Cook Ham

Thursday

Slice Turkey and ham

Make dressing

I am also excited as I saw a news clip in the paper today wanting people to invite military people for the holidays.  YEA!  I was like me me me!!!   I'm not sure how many we will invite.  I did talk to the man in charge.  He is blown over by Texas hospitality.  He said one lady said she could do 35!!!!  That they usually have 40 or so family and could do 35 extra.  I can relate!   I don't think I would do that many, but I may tell him up to 10.  I won't even have to toss another 'tater in the pot for that many.  

I was feeling kind of sad because several people that usually come have other places they need to go this year.  I do understand, just feel sad as this is my favorite time to cook.   Maybe I need to invent my own holiday and have a party then.  

I use to worry that my 21 yo would show up with a deer Thanksgiving morning.  He always went hunting, but God was good and he never got one that day.    This year he and his family won't be here.  Guess I get to eat his cherry pie!  Most years we do have to take time off to go help a goat or sheep have babies, or round up escaped critters where a gate got left open.   It won't be Thanksgiving as usual for these service men and women.  Life in the country!

I'm so glad to know other people plan out everything days in advance like me! How do you do your pie crusts, roll them up and freeze them, or put them in the pie pan and freeze?

This is from a OAMC that I have changed up some.

Freezer Pie-Crust Mix

6 cups flour, I use WW
2 teaspoons salt
2 1/2 c. shortening, I use coconut oil
1 1/4-1 1/2 c. COLD water
In a bowl combine flour and salt . With a pastry blender or heavy duty mixer cut in shortening until mixture resembles corn meal in texture. Add 1 1/4 c. water all at once. Mix lightly with a fork until water is absorbed and mixture forms a ball. If necessary add additional water. Divide dough into 7 portions. Shape into balls. Flatten each ball slightly. Wrap each flattened ball in a piece of plastic wrap Place wrapped ball on a piece of foil. Fold foil tightly against ball making an airtight seal. Store in freezer. Use within 10 months.

Mine get made into balls and tossed in a zip lock! I also always double the recipe. I don't like doing it. But I do like having pie crust when I want them.

Just want to share the joys and tears of living in the country with others that understand them both. I am mom to 5 children. Two biological and three adopted. We are praying for one more adopted soon. We live 40 miles from town on 117 acres. My days are full of homeschooling children and dealing with livestock.
