• Monday, June 1, 2009 - Miracle Pie from the Better Times Cookbook

It is DELICIOUS! I ate a piece for lunch. It is rich without being too sweet. Very custard like with a crispy coconut top and it creates it's own crust. Clean up is beyond easy...

Ingredients:
1 cup sugar
1/4 cup margarine
4 eggs
½ cup flour
2 cups milk (or 2 cups of water and 6 tbsp of non instant dry milk)
1 cup coconut
1/4 tsp salt
½ tsp baking powder
1 tsp vanilla extract

Preparation: Gather your ingredients, preheat the oven to 350 degrees F, and make sure your blender is clean. Grease and flour a 10 inch pie pan (I use coconut oil)

Instructions:
  1. Add ingredients to the blender
  2. Blend
  3. Pour into a greased and floured 10 inch pie pan
  4. Place in preheated oven for 1 hour
  5. Take out and cut
  6. Serve warm for a quiche like lunch or serve cool or cold for a pie.


Beyond easy clean up and the family loves it. One piece and I am sooo full. Very satisfying. Did I mention it is beyond easy to clean up? The lazy person inside of me rejoiced.
