Dad's home, first week of school, Lauren's tonsilectomy...

Ok, I've decided to stop saying I'm going to post more often, as every time I say that, I seem to go days without getting on the computer.

Here is an overdue update on us...

Dad is home from the hospital, and is doing 'ok'.  He found out Wednesday he has kidney failure and had it before the back surgery was done at the beginning of August.  None of his doctors ever mentioned this, so he / we had no idea.  They say his blood sugars being out of control probably attributed to it and they raised the dosage of his glucotrol.  He doesn't take insulin at home, but they do give it to him at the hospital, when he's there.  He has never been diagnosed with diabetes, but his sugars are all over the place.

He was discharged on Thursday and assigned a visiting nurse to have his vitals checked every other day.

My mom and dad will be moving again around September 20th.  The home they are renting now is in foreclosure and they don't know when it will be posted.  They've already put some of dad's things into storage, so they mostly just have the house things left to move.

They will be moving into a very nice place located one block from Lake Michigan and less than a block from my brother Dustin's place.  The new place has 7 acres and yardwork/upkeep/plowing is all included in their rent.  It seems ideal.  Dad is happy about the room to roam and get into troubles with Lilli, and mom is happy that it's a nice area for walking.  I hope this place works out for them.  :)

Lilli started school with just a half day on Tuesday.  Wednesday through Friday were full days, and so far, she seems to enjoy it.  She did say that she doesn't like first grade because she doesn't like doing all that work.  I tried to warn her that it was probably going to get a bit worse before it got better.  LOL.

She hasn't had any trouble going to bed at night (we have a 8ish bedtime), nor getting up in the morning.  She's been great on both of those, even falling asleep as soon as her head hits the pillow.

She started dance on Thursday.  She had signed up for ballet and jazz.  Then decided she really wanted to take tap as well.  She stayed and tried the class and loved it, so it looks like we'll have to buy tap shoes this week, and figure out what we owe now, since we already paid for two classes, not three.

Ballet is from 6-6:45.  Jazz is from 6:45-7:30.  Tap is from 7:30-8.

So we'll be at dance from 6-8PM every Thursday evening.

The only reason we ok'd the third class was because it is back-to-back with the other classes she is taking.  We can't make the drive more than once per week, so she had to find something that was all on one night.  I was glad when she DIDN"T want to take tap, as that class ends at 8PM (our bedtime).  I really don't mind her taking it if she likes it though, and it's only once per week, and it's on Thursday nights, so she only has one day of school left in the week after her late night.

There are also two little girls in all three classes with her that were in her Acro class last year.  She was very happy about that.

She starts her horse riding lessons tomorrow morning, if it isn't raining.

Lauren had her tonsils out on Thursday this last week.  At 22 months, she's very young, so they told us she'd have to spend the night in the hospital following the procedure.  We made all the preparations for me to stay at the hospital with her and Lance to come home and get Lilli from school and take her to dance, etc.

In recovery, the Dr came in several times saying that she'd probably need to spend the night, but the nurses kept saying that she would rally and probably go home soon.  She was crying and incoherent, so we weren't sure what was going to happen.  She did finally snap out of the anesthesia and when the nurse asked about a popsicle, she said, 'sicle, sicle'.  LOL.  She ate 4 popsicles!  The Dr came in and said she would be fine to go home.  LOL

They told us that french fries were great to feed her as they were soft and salty (which would make her drink more), so we stopped by McDonald's on the way home.  She seemed to eat a lot, but then we figured out she was chewing them, but not swallowing them.  She would get a mouth full and then spit them out in the box.  Ah well, she was going through the motions anyway.  Ewww.

She went right back to drinking and eating normal within just a short time of being home.  She did sleep a lot, and has been sleeping a lot since then, as she's on Tylenol with Codeine every 4 hours around the clock.  It makes her tired, fussy, and a bit confused and wobbly.  She does sometimes seem to be in pain before the next dose is due, so we continue to give it to her as directed.  Hopefully we can slow down on it tomorrow sometime.

They also put her on an antibiotic (Amoxicillan) as her tonsils were infected when they took them out.  I had pointed them out to Lance the night before the surgery, as I didn't know if they'd still do the surgery or not.  I'm glad they did though, she got sick with them so often :(  The doctor assured us we were going to see a new little girl.  He said he didn't know how she could breathe with them being so big, much less sleep (she snores) or eat/swallow.

Lance is doing good, but working a lot.  Usually 6AM-4PM, Mon-Fri, but lately it's been Saturday and sometimes Sunday too.  He worked today and I think he's doing some work for his cousin tomorrow.

He fixed my vaccuum today.  I'm not sure what was wrong with it.  He found that I'd somehow vaccuumed up two bouncy balls ??  I honestly have no idea how that happened.  I really don't think I did it, but I can't think of any other way they'd have gotten in there.  I don't know if that's why it broke, but he did inform me that he didn't want me running over any more.  LOL.

I hope to take Lauren to storytime at the library, and to playgroup this week.  Both are right here in our small town, so there aren't a lot of miles involved.  Playgroup is weekly, but I don't think storytime is.  We'll have to see.

I'm off to put Lauren down for a nap.  I hope to post again SOON.  LOL

Canning & Baking Bonanza

This week on the New Harvest Homestead forum, there have been questions on canning beans and how to do it.  I have been canning our own beans for about a year now and truly love having the convenience of home-canned beans instead of spending my money at the grocery store.  I don't know ... call me crazy, but if I can can beans and save us money, then I'll can beans!

So, after some discussions and answering questions, I thought I'd go ahead and can up some more beans today.  I made a small batch of baked beans (5 pints) and about 9 or 10 pints of red beans (I can't remember right now as they're in the canner).

That wasn't enough, so I went ahead and made a Pineapple Upside Down Cake, a double batch of buttermilk biscuits and I plan on making two batches of cookies:  Snickerdoodles (hubby's favorite) and Chocolate Chip Cookies (munchkins' favorites).  I should be done with all the baking by early afternoon.

I just turned off the canner so once the canner de-pressurizes, I'll get those out.

I haven't done much canning this summer (not compared to last summer).  Since the cucumbers didn't make it, I didn't can any pickles.  But, we had TONS left over from last summer to carry us through next summer.  Yep, that's how many we had!

Also, as the tomatoes aren't all ripening at the same time, I've been roasting and "food milling" tomatoes in small batches and putting those in the freezer.  I made a batch of homemade spaghetti last week using some of the roasted tomatoes and man, oh man, was it good!!!   I used our fresh basil and our dried oregano, fresh garlic ... mmm-mmmmm.  Talk about yummy.

We started homeschooling last week and it seems to be going pretty good so far.  We've changed the way we do our homeschool this year (as far as the way we homeschool) and we're accomplishing a lot but it doesn't feel like it...maybe because we're not doing the "busy work" we were doing last year.  We'll see how this year goes!!!

I hope y'all are all doing good.  God's blessings!!!

A Lesson From the Nail

He must increase, but I must decrease.

John 3:30

Philip could have felt that his ministry was being elbowed aside and eclipsed when Peter and John came to the mission he had developed. They just seemed to brush aside recognition of his excellent beginning in planting the church. But he accepted it graciously and moved on to the next assignment the Spirit had for him! He did not seem to care who got the credit for what he did. Because of his faithfulness, his work was effective.

The nail may hold a few lessons for us. After the torturous manufacturing processes, it is driven into its place of service by blow after cruel blow of the hammer. Nothing is left to sight except the head.

The poor finish nail is not only driven to its niche in life like other nails, but the nail set comes along and drives its head well below the surface. As if that were not insult enough, putty fills the hole on top of the head, and paint permanently conceals the place where the nail does its work quietly and faithfully, unnoticed for its importance.

How important is the nail? Suppose all the nails in your house would suddenly go on strike and stop doing their jobs. That would bring chaos.

We, too, are called to silently and faithfully do our work, even if we are not noticed. We tend to think we should receive recognition for the “head-pounding” we endure to hold things together. But God notices all that pertains to His children’s lives.

Our emotions are not made of steel like a nail, but of feelings and sensitivities. So we do need audible and tangible encouragement and compliments frequently. Today, your sincere compliment may be just what someone needs to encourage him to stick with it! Will you give one?

Elmer Schrock, Stuarts Draft, VA

It is amazing what God can do if we don’t care who gets the credit.

Palin

Wow, I was very surprised to see so much political voice here!  Well, I just thought I better put my two cents in.

First of all, Palin.  Should we vote in a female president (who has a family at home who needs her)?  No, but guess what?  We don't get to vote on our VP!  We only get to vote for who we want to be the President.  I know, I know - I'm over simplifying.  But the truth is this, we must vote for the President who most closely resembles a man of God.  God already knows who that man will be, and we have to trust Him to direct the pre-President in choosing a VP.  I wish McCain were more godly.  But at least there are not web sites claiming that he is God!  Yes, google Obama Messiah and you will see just what I mean.

Another thing, I know that McCain is not 100% pro-life, but if by voting him into power if we save only 10% of the babies who would otherwise have been murdered via abortion, then we have saved 120,000 babies!!!

I am not going to mention oil or taxes because these things will always go up (generally speaking, I mean, when was the last time you heard your parents say "wow, when I was a younger we paid $6 a gallon?)  Yes, change needs to happen, but....well, anyhow.

Happy Trails!

Why Do Bad Things Happen to Good People?????

I love the song, "Held" by Natalie Grant.  I have sang it and cried tears over it for some time now, but when they played it on the radio the day after my mom died, it became even more near and dear to my heart.

You see so many think bad things happen to good people, and why would God do this.  Why would God take that person away, or let this or that happen.  If He can do all things, and if He is all knowing, why didn't He stop this???  Simply put???  That isn't who God is....and it isn't who He promised He would be either.

Now, before you turn away and close this blog, hear me out.  God never told us we wouldn't have bad times, and trials in our lives.  He never promised to keep us from sadness, sickness, etc.  He didn't say as a child of His that we would never experience these things.  He simply said, when we do.........He would be there for us!!!

No, life isn't fair sometimes.  A 3 year old dying while swimming with his family.....is not fair.  A 3 year old having her life taken by her father and then killing himself...........certainly not fair.  Loosing both of my parents at age 63 was completely not fair.  I remember speaking to my pastor after they died, and saying it isn't fair!!!  He said you are right.  You got cheated out of more time with your parents.  You feel like you didn't get what you deserved  and it is ok to feel that way, as long as you don't STAY there long.  I think I was there for months, probably longer than I expected to be.  But then I realized, I didn't want to live in the shoulda coulda woulda life.  I wanted to make my parents happy, remembering the good times, not focusing on the unfair moments.

This song talks about that......when all else fails....and you feel like giving up.......that is when,  you will be held.  Close your eyes dear one, fall into his arms, and let Him hold you.  Cry on His shoulder.  He is always there for you.  If you will only stop accusing Him of hurting you, and let Him hold you, and help you to heal.  He didn't do this TO YOU!!!!  And he didn't glory in your trials.  NO, like any loving father, He doesn't like to see you hurting.   Read the words to this song, and if you have the means, please listen to the song.  Just close your eyes and listen.

Two months is too little.
They let him go.
They had no sudden healing.
To think that providence would
Take a child from his mother while she prays
Is appalling.

Who told us we'd be rescued?
What has changed and why should we be saved from nightmares?
We're asking why this happens
To us who have died to live?
It's unfair.

Chorus:
This is what it means to be held.
How it feels when the sacred is torn from your life
And you survive.
This is what it is to be loved.
And to know that the promise was
When everything fell we'd be held.

This hand is bitterness.
We want to taste it, let the hatred numb our sorrow.
The wise hand opens slowly to lilies of the valley and tomorrow.

(Chorus)
This is what it means to be held.
How it feels when the sacred is torn from your life
And you survive.
This is what it is to be loved.
And to know that the promise was
When everything fell we'd be held.

Bridge:
If hope is born of suffering.
If this is only the beginning.
Can we not wait for one hour watching for our Savior?

(Chorus)
This is what it means to be held.
How it feels when the sacred is torn from your life
And you survive.
This is what it is to be loved.
And to know that the promise was
When everything fell we'd be held.

Flavors of Fall (Our families favorite fall soups)

Posted by AMY JO

Hi all.  I love fall, and the cool weather we have had here in MIssouri for the last two days.  I am afraid it is going to warm up again, and I don't want it to!  LOL  I love fall, the colors, the leaves, the pumpkins, wearing my favorite sweaters, hayrides, etc.  And I do love soup weather as well.  So I decided to share some of my families favorite fall soups and other recipes with you.  I love to cook, and love the compliments I get from my cooking, but like many of you, I simply don't have time to spend 2 hours in the kitchen preparing it!!  So most of mine are crockpot meals (saves electricity anyway), and other quick meals.  Well, here are a few:

1.  South of the Border Chicken Soup

(Serves 4-6??)

(I have posted this before, because I love this soup even in summer with fresh corn and tomatoes instead of frozen or canned, but it is especially good on those cold chilly days.  I shared the recipe with my friend tractorchick72 here on HSB and it is one of her new favs and she says her son loves it as well!!)

1 tsp olive oil

2 garlic cloves, minced

2 cups cooked adn shredded chicken

1 tsp cumin

1/2 tsp chilli powder

2 cans (14.5 each) diced tomato

1 cup chopped onion

1 cup frozen whole kernel corn

1 tsp Worchestershire sauce

1 can (10 3/4 oz) can tomato soup

2 cans (14 1/2 oz each) chicken broth

Saute' garlic and onion in oil.  Stir in reamaing ingredients and bring to a boil.  Reduce heat and simmer for one hour.  Optional: Garnish with a dollop of sour cream adn some crushed tortilla chips.  (Yes you can do this in the crockpot!!!!  Super easy!  And this soup freezes very well!)

Yummy Beef Stew

(serves 8)

2 lbs beef stew meat, cut into 1 inch cubes

3T vegetable oil, divided

1 cup water

3 large potatoes, peel and cubed (1 inch)

4 medium carrots, sliced

1 large green pepper, 1/2 inch cubes

4 garlic cloves, minced

1 medium onion, chopped

2 tsps salt

1/2 tsp pepper

2 T instant beef bouillon granules

1 can (14 1/2 oz) diced tomatoews, undrained

Brown meat in oil in a Dutch oven.  Add water, potatoes, carrots, green pepper, garlic, onion, salt and pepper.  Cover and simmer for 2 hours.  Stir in bouillon and tomatoes and heat through before serving.  (This recipe was from a Taste of Home book.  The original recipes calls to put the stew in a nice hollowed out pumpkin and bake it.  Then when scooping out the stew, you scrape the inside of the pumpkin to get some pumpkin in your stew as well.  I am not a real big pumpkin eater unless it is in pie, so I don't do this.  But it does sound interested and fancy doesn't it???)

3.  Broccoli Cheese Soup

(serves 4)

1 cup chopped broccoli

4 cups chopped fresh broccoli

2 cups peeled and diced red potato

1/2 tsps garlic powder

2 2/3 cups chicken broth

1 Bay leaf

3/4 cup shredded reduced-fat cheddar cheese

12 oz can evaporated milk

Saute' onion with non-stick cooking spray in a Dutch oven.  Add 2 cups broccoli, potato, garlic powder, bay leaf, and chicken broth; bring to a boil.  Cover, and reduce heat, and simmer 20 minutes or until vegetables are tender.  Discard bay leaf.  Puree broccoli mixture in batches and then return to pan.  Stir in remaining broccoli, cheese and milk.  Cook until tender.

4.  Jeanie's Sausage Bean Chowder

This recipe came from my mom's best friend.  She died about 6 months before mom did and I was so glad when I went through my mom's recipes to find this one, still in Jeanie's handwriting on a recipe card!!!  This is one of hubby's favorites!!!)

(serves 6)

2 lbs sausage, browned and drained

2 (16 oz each) cans pinto beans

46 oz tomato juice

4-5 diced potatoes

1/3 cup dried onion

1/2 green pepper, diced

1 Bay Leaf

1/2 tsp each: thyme, and garlic salt

1 1/2 tsps Lowrey's seasoning salt

Combine all ingredients in a Dutch oven (or crock pot) and simmer for 2 hours or until potatoes are done.  Remove bay leaf before serving.

5.  Best In The West Bean Bake

This recipe originally came from my Aunt Mary, my mom's sister, and now the whole family has this recipe and fixes it often.  It is like a baked bean soup almost, and don't forget to serve lots of cornbread with this one!!  YUMMY!!!!  This reminds me of deer season each year at my grandmother's.  They boys would gather early adn go hunting, and the women folk would gather early making hot soups and cornbread and biscuits, pies, cakes and cookies for the gentlemen.  At lunch time, the men came in to show down, and the women folk would clean up afterwards, and then add to if needed for supper.  Supper was the same, eating, and cleaning up.  But the times in between the kids played, the women sewed or crocheted, and visited.  I miss those times!

1 lb hamburger

1 onion, chipped

1 lb bacon, chopped

1/2 cup BBQ sauce

4 T prepared mustard

1/2 cup ketchup

4 T brown sugar

16 oz can red kidney beans, undrained

16 oz can pork and beans, undrained

16 oz can butter beans, undrained

1 tsp salt

1/2 tsp pepper

Brown hamburger, bacon and onion in a Dutch oven.  Combine remaining ingredients and bake for 1 hour at 350.   Of course this is another that could be done in the crockpot.   The butter beans sound unusual??? Yeah, maybe it is.  I don't like butter beans, but I love them in this dish. LOL  If you don't like them, or the other beans, substitute your own choice.

6.  Easy Texas Chilli

1 lb lean ground beef

1/3 cup chopped onion

1 garlic clove, minced

1 1/2 cups water

1 T chili opwder

1 tsp salt

16 oz can chilli beans, undrained

6 oz can tomato paste

Brown meat with onion and garlic in a Dutch oven until meat is no longer pink.  Return meat to pan and stir in remaining ingredients.  Cover and simmer for 15 minutes.

7.  White Bean and Ham Soup

2 cans (15 1/2 oz each) great northern beans, rinsed and drained

2 carrots, diced

1 small onion, diced

2 T butter

2 1/2 cups water

1 1/2 cups cubed fully cooked ham

1/2 tsp salt

Thank You Jesus For Everything!

I was visiting a blog and someone was wondering how you keep up with your friends. Someone told how.

This is what you do. When you are on your blog your link in the white thingy just go up to it and after / type in friends. Then do what ever to get to that site, I just enter and brings my link up. Anyway it will bring my blog up with the new entries of my friends right on it. It is simple! I then save in my favorites.

I hope this explained it enough where you can understand it.

I am new at this stuff and trying to learn as I go. It has been a challenge although I love learning something new. It seems to make you think clearer and creative.

Have a blessed weekend ALL!  rilda
