Chewy granola bar recipe

Chewy Granola Bars

3 1/2 cups rolled oats

1 cup Rice Krispies

1 cup whole wheat flour

1 teaspoon baking soda

½ teaspoon salt

½ teaspoon cinnamon

2/3 cup butter, melted

1 cup honey

1 teaspoon vanilla extract

1-2 cups miniature semisweet chocolate chips, Craisins, raisins, nuts, or a combination

Directions:

Preheat oven to 325 degrees F. Lightly grease 9x13- inch pan.

In a large mixing bowl combine the oats, Rice Krispies, wheat flour, baking soda, salt and cinnamon. Add melted butter, honey and vanilla. Stir in 1-2 cups chocolate chips, raisins, etc.

Firmly press mixture into the pan. Bake at 325 degrees F for about 18 minutes or until golden brown. Let cool for 10 minutes then cut into 18 bars. Let bars cool completely in pan before removing or serving.

Now, what I did was put all that in while I melted the butter. So I had all these chips on top. Needless to say, when I poured the melted butter over them, THEY MELTED!LOL I think that's why it didn't set up--too much liquid. the other lady who made these added the chips/nuts/fruit LAST, which is what I"ll do next time.

I also used 7 grain flour (vs. whole wheat) and added flaxmeal. And I wanted to use craisins and had no mini chips so I just used big ones.;)



Oreo truffle recipe

Oreo Truffles:

1 package of oreos

8 oz of cream cheese

16oz (I used 12 and still have some leftover so I"m sure that I screwed up somehow!LOL) of semi sweet chocolate chips, melted

Finely crush (run thru FP) 9 oreos and set off to side. Crush the rest and mix until thoroughly blended w/cream cheese. Roll into 1" balls. Dip in chocolate. Sprinkle remaining oreos on top. Put in frig to firm up for 1 hour. Keep in frig. Makes 42 truffles.

I had all the stuff on hand nad used double stuffs and they worked fine.

For fun, you could melt a tiny bit of white chocolate and 'string' on top of truffles for show.

Cheesy potato soup tongiht. It smells AMAZING! And of course, I tossed in a little bit of this and that!LOL I didn't have ham and was totally kicking myself, but then I found that swiss colony ham that my aunt sent and got that used. I had a bit of green onion cheese and that needed used so in that went!LOL It called for 2 cups and milk and I had almost 2 cups of whipping cream and tossed that in. Mixed the water and flour in the cream carton so make sure that i got it all!

This is obviously not low cal!LOL

Mat's soup by mat

ingredients

1. boil 6cups and 6boullion cubes in muidium pot

2.put the following in,a 6 oz. can of chickin,2/3 a cup of noodles,2 cans of mixed vegetables, 1can of chick peas,1 can of black pinto beans.

3.cook for 40 minutes

just double for more people



some ingredients are not needed

Can I tell you how hard I am laughing at hte last 2 lines??????LOL

 

Thankfully it's quite tasty. And there is alot of turkey in it (we didn't have a can of chicken--we used a sandwich baggie of frozen turkey from the last of our 'local turkey'!LOL) so DH might not even gripe when I serve it tomorrow night as supper. I'm not thinking I"ll be walking for a while........




Cheesy Manicotti

Cheesy Manicotti

Makes:
7 servings, two stuffed shells each
1 pkg. (8 oz.) sliced mushrooms
2 cloves  garlic, minced
3 egg whites
1 pkg.  (10 oz.) frozen chopped spinach, thawed, well drained
1 container (15 oz.) part-skim ricotta cheese
1 cup  KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese, divided
1/3 cup KRAFT 100% Grated Parmesan Cheese, divided
1 pkg.  (8 oz.) manicotti shells (14 shells), cooked, drained
2 cups spaghetti sauce

PREHEAT oven to 350°F. Spray large nonstick skillet with cooking spray. Add mushrooms and garlic; cook 5 min. on medium heat, stirring frequently. Remove from heat. Beat egg whites lightly in medium bowl. Add mushroom mixture, spinach, ricotta cheese and half each of the mozzarella and Parmesan cheeses; mix well. Spoon evenly into manicotti shells.

PLACE in 13x9-inch baking dish sprayed with cooking spray. Cover with spaghetti sauce.

BAKE 40 min. or until heated through. Top with the remaining mozzarella and Parmesan cheeses; continue baking 5 min. or until mozzarella cheese is melted.

Ok, I loathe stuffing manicotti so I got jumbo shells instead (sooooooo much easier IMO!) and I didnt' realize that we were out of mushrooms so I omitted them (put in extra mozzarella) and simply used roasted garlic (no sauteeing). I can't wait to dig in cuz it looks amazinga nd smells heavenly!




Sausage Pumpkin Soup Recipe

  • 12 oz. tube Hot Sausage
  • 1/2 c. onion(I cut up 1+1/2)
  • 1 clove minced garlic(I threw in a couple dashes)
  • 1 TBSP. Italian seasoning
  • 2 c. fresh mushrooms diced (I used 3~next time I'll leave 1 in *slices)
  • 1-15 oz. can pumpkin (100%)
  • 4 c. chicken broth (I used 6)
  • 1/2 c. heavy cream
  • 1/2 c. water

    Brown sausage, garlic, onion, together...add in mushrooms and Italian seasonings...saute until done.

    Add pumpkin to mixture and mix well. Add broth and simmer 20-30 minutes. Stir in cream and water...simmer another 10-15 min. Salt and pepper to taste.

    OMG~This soup in unbelievable. The flavors meld so well together. I didn't have the hot sausage....I used a lb. of bulk sweet italian and added crushed red peppers...and finely ground red pepper. You can make this as spicy as you want.

    For my tweak....I added a bag of frozen cauliflower...and 1/2 c. frozen corn.

    I thought I posted here, but I guess not. I DO NOT TAKE ANY MEDICAL RESPONSILITY FOR THIS!

    This is a do it yourself.

    1. Psyllium husk This can be generic or the name brand Metamucil …read the labels, it’s all the same stuff.

    2. Digestive Enzymes The pharmacists told me there are only a handful of digestive enzymes that exists. If you get the multi-enzyme bottle, you should cover them all.

    3. Laxative Herbal Tea (with Senna) A tea called “Smooth Move” is a popular one. It doesn’t really matter what name brand you get, just make sure it has “senna” in it.

    4. Water You will need to drink lots of water.

    How it works

  • *IMPORTANT! You must drink a minimum of 2 quarts of water throughout the day. The fiber needs water to move. Not drinking enough water can result in dehydration and/or constipation.

    Morning: Take 2 heaping teaspoons of the psyllium husk powder.

    Afternoon: 2-3 pills of the digestive enzyme pills. This promotes good bacteria in your colon as you are releasing all the sludge.

    Evening: Take 2-3 heaping teaspoons of psyllium husk powder.

    Night time (just before bed):Steep Senna *Tea for 15 minutes and drink.

  • Warning, this tea can cause diarrhea. However, this usually doesn’t happen as the psyllium powder already in your body (which is thick) counter acts this. The tea is like the “power” (gets your intestines ‘squeezing”) and the phylum powder is like the “roto-rooter“.

    Fall Dinner in a Pumpkin

  • Medium sized pumpkin (4 lbs.)
  • 1-1/2 pounds lean ground beef
  • 1/3 cup chopped green pepper
  • 3/4 cup chopped celery
  • 3/4 cup chopped onion
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup soy sauce
  • 2 Tbs. brown sugar
  • 1 4 oz. can mushrooms
  • 1 can cream of chicken soup
  • 2 cups cooked rice
  • black olives
  • steamed carrot
  • whole cloves
  • fresh parsley

    Using a sharp knife, cut lid from pumpkin and scoop out pumpkin seeds and excess membrane with a scraping tool. In a large skillet, combine ground beef, chopped green pepper, chopped celery, and chopped onion and cook over medium heat until ground beef is browned. Add next seven ingredients to skillet. Mix well and place mixture into pumpkin cavity. Place lid on pumpkin. Place pumpkin on a foil-lined cookie sheet and bake at 350*F for 1-1/2 hours. Just before serving, embellish pumpkin by placing (with toothpicks) black olives to make eyes, a steamed carrot to make a nose, and whole cloves to make a mouth. Use fresh parsley leaves to make hair around top opening. To serve, scoop out part of the baked pumpkin, along with the meat mixture, onto each plate.

    Someone suggested this to me a few years ago and it's AWESOME! Get about  1/4-1/3 cup warm water (NOT hot from the tap), mix in maybe a tsp of salt (to make a saline solution), a tsp of baking soda and a few drops of tea tree oil (I measure none of this). Swirl in container. Find something (I use the aspirator that the hospital sent home from Joey) to suck up the solution and be able to release it into your nostril. The trick here is holding your head just so so. You want it tilted forward, but also sideways so that (in theory) the solution runs from one nostril thru to the other. This does take some mastering so don't get discouraged when the most disgusting tasting stuff runs down the back of your throat because you didn't have your head far enuf forward.  Do this 3-4 times a day.

    This is so amazing that you will want to do it more. I don't know how safe that is!LOL(really I don't!). The tea tree oil kills the bacteria and the saline solution (and presumably the baking soda) help to dry things up. Even if you are so clogged up that you can't get it to run from one nostril to the other, it will make a HUGE difference. I've never seen a doc for a sinus infection and don't plan on starting now. Typically after 3-4 days, it's gone.




    Make your own pumpkin pie spice

    I'm sure that many of you already know this but with the pumpkin pie season coming on in full force, I thought I'd give a reminder.

    1/2 tsp cinnamon

    1/4 ground ginger

    1/8 tsp allspice

    1/8 nutmeg

    Some recipes also include 1/8 tsp of clove so that's an option if you like that. Personally I make enuf to fill my pumpkin pie spice container (which I rememered today when I was making holds 6x that recipe!LOL) so that I"m not dragging out bottles each time I need it.

    Today is hte big day. I'm making that pumpkin bread w/cream cheese in it: http://www.kraftfoods.com/main.aspx?s=recipe&m=recipe/knet_recipe_display&wf=9&recipe_id=107300 and then custard. Then I have to dig out my CP recipe for potato soup. I'm still a bit undecided, but I did get some green onion cheese out of the freezer to use for hte cheese. Dh will NOT care for this, but I think I will LOVE IT!LOL And it will be my lunch for the rest of the week.;) I haven't decided if I"m going to add sausage or not. DH will approve of that. I do have bacon to use.


    Seminole style hominy

    Hominy

    1/2 cup dried popping corn
    3/4 tsp baking soda
    1 cup water
    1 tsp butter
    pinch salt

    First mix the baking soda and water in a cooking pot. Add corn and set aside overnight. Next, in the morning, place the pot on the stove. When the corn begins to boil, turn down the heat. Place a lid on the pot and let simmer for 3 hours. Then pour the corn into a sieve and let the water drain through it. Then, place the corn in cold water and remove the popcorn hulls with your fingers. Last, boil the corn two more times and remove and left over hulls. Add a little butter and salt to the corn. Now you are ready to eat Seminole-style hominy! Serves 4.


    Santa Fe Potato Salad

    6 med potatoes

    1/2 c oil

    1/2 c red wine vinegar

    1 taco seasoning packet

    1 7oz can of corn (drained)

    1 bell pepper

    2 med tomatoes (diced)

    2/3 cup shredded carrot

    2/3 cup celery

    1/2 c red onion

    two 2.25oz sliced black olives

    Boil potatoes for 40 min (I thought this was waaaaaaaaaaay too long personally--the skins were pealing off tho, which made it easy!LOL). Dice. Mix oil, vinegar nad seasoning adn put in bowl w/potatoes and put in frig for 1 hour. Then add chopped up veggies and chill until cold. Serve in lettuce lined bowl if desired.

    There was a creamy version that you replaced the oil and vinegar w/mayo and something else.......

    And I did not use those measurements!LOL In my world it was 2 ears of corn, 1 small red onion, 2 carrots, 2 celery stalks and 2/3 of a can of whole olives.



    SOUPER recipe!

    I sort of modified one that I found, but here goes:

    Cream of Broccoli Soup

    6-7 cups of broccoli flowerettes

    4 cups of chicken stock/broth

    2 cups of half and half

    1 bay leaf

    some salt

    some pepper

    1 onion (chopped)

    16 oz diced ham

    1/3 cup flour

    1 stick of butter

    Put broccoli, stock, butter, salt, pepper, onion and bay leaf in pan to simmer for 30 min. Pull out bay leaf. Purree half of the soup and flour and put back in pan and add half and half and ham. Simmer 15 more minutes and serve.

    I put the half and half in before purreeing, but oh well. You get the idea.;) Also, I started this in 2 pans. DH claims to hate onions and this way I put all the onions in the pan that I pureed and it was easier to do the purreeing like this anyway. JMO.




    grocery bill........

    May's bill was higher than most, but that's cuz we bought the 2 feeder pigs. So the yearly total is at $780, which is $39/wk. Higher than the previous $36, but that number will go down adn I"ll feel better!LOL

    I'm just drooling for the garden to hurry up. So far we have harvested lettuce--YUMMY! The peas are blooming and the potatoes are getting ready to bloom. The radishes will be done soon, but Mat is really the only one who likes those!LOL It will be late July before most of the other stuff is ready.........




    Detox diet--one that I can abide by!

    This is a 7 day eating plan that can be used as often as you like.  If correctly followed it will clean out your system of impurities and give you a feeling of well-being as never before.  After only 7 days of this process, you will begin to feel lighter by at least 4,5 - 7,7kg.(10 pounds)  You will have abundance of energy.  Continue on this plan as long as you wish to feel the difference.  This diet is fast fat-burning and the secret is that you will burn more calories than you can take in. 
     
    The Soup
    2 cans of tomatoes or fresh tomatoes
    3 large onions
    1 bunch of celery
    2 green peppers
    2 cans of green beans or fresh beans
    2 large bunches of carrots
     
    Method: Season with salt/pepper, beef cubes.  I used Bay Leaf, & powder garlic also(Robbin) it adds more flavor. Cut veggies in small to medium pieces. Cover with boiling water and cook.  Reduce heat to simmer and continue cooking.  This soup can be eaten ANY TIME you are hungry, eat as much as you like whenever you want.  This does not contain calories.  The more you eat the more you lose.
     
    Drinks:  unsweetened juices, tea, coffee, cranberry juice, skimmed milk and water, water, water....
     
    DAY ONE
    Any fruit except bananas, watermelon & spanspek(cantaloupe) are lower in calories than other fruits. Eat only soup and fruits today.
     
    DAY TWO
    All vegetables. Eat till you are stuffed with fresh, raw, cooked or canned vegetables. Try to eat green leafy veggies. Stay away from dry beans, peas or corn.  At dinner tonight, reward yourself with a big baked potatoe and butter.  Do NOT eat ANY fruit today.
     
    DAY THREE
    Eat all the soup, fruit and veggies you want. DO NOT have a baked potatoe. If you have eaten as above for 3 days and not cheated, you should have lost 2.2 to 3.1 kg (4-6 pounds)
     
    DAY FOUR
    Bananas and skimmed milk - eat at least 8 bananas and as much milk as you can today.  Also eat the soup.  Bananas are high in calories and carbohydrates as in milk.  On this particular day your body will need potassium and carbohydrates which lessen the craving for fruit.
     
    DAY FIVE
    Beef and tomatoes. You may have 625 grams(22 oz.) of beef and 4 tomatoes on this day. Eat soup at least once today.
     
    DAY SIX
    Beef and veggies.  Eat to your heart's content of the beef  and veggies today.  You can have 2 - 3 steaks with green leafy veggies, but NO baked potatoe. Be sure to eat soup at least once today.
     
    DAY SEVEN
    Brown rice, unsweetened fruit juice and veggies.  Again be sure to stuff yourself and eat soup.  You can add cooked veggies to your rice if you wish.
     
    By the end of the 7th day you should have lost 4,5 - 6,8 kg (10 pounds). If you lost more than 7,7 kg stay off the diet for 2 days before resuming the diet again.  This diet does not lend itself to any alcoholic beverages at all.  Because of the fat build-up in your system, go off the diet at least 24 hours before any intake of alcohol.  Because everyone's digestive system is different, this diet will affect everyone differently.  After 3 days you will have more energy than when you began if you don't cheat.  After being on the diet for several days, you will find your bowel movements have changed.  Eat a cup of bran or fiber.
     
    Although you can have black coffee with this diet, you may find that you don't need caffeine after the third day.  The basic fat burning soup can be eaten anytime you feel hungry during the 7 days. Eat as much as you wish.  Remember the more you eat the more you lose. You can eat boiled or baked chicken instead of beef(no skin). If you prefer you can eat fish instead of beef on one of the beef days.  You need the high protein in the beef for the other day.  Any prescribed medication will not hurt or affect you on this diet.  Continue the diet plan as long as you wish, and feel the difference both mentally and physically. 
     
    DO NOT! DO NOT! DO NOT! eat bread, drink alcohol, carbonated drinks (including diet drinks) REMEMBER....absolutely no fried foods!
     
    DO! DO! DO! Drink plenty of water, at least 6 - 8 glasses a day as well as any combination of the following beverages...black coffee, unsweetened tea, unsweetened fruit drinks, cranberry juice and skimmed milk.



    I MADE CHICKEN!!!!!!!!!

    Please understand that just due to supply, we rarely (like once a year) have chicken. So I really know very little about chicken. I can now say that that changed a little bit today! I did that whole chicken in the crock pot and it was AMAZING!!!!!!!! The skin peeled right off and the meat just fell off the bones! I have the broth and leftovers ready to make stock on Thursday. Needless to say, I'm VERY excited about that too!

    We got at 4 meals from that bird as well. We ate tonighta nd I have 3 baggies of shredded chicken just waiting ot be eating. DH suggested chicken salad and I was thinking maybe chicken enchiladas. The last bag I may just use on top of my salads at lunch.

    Plus since I remembered to use Pam on the CP, clean up was a snap!;)




    pasta and cream cheese recipe as per request

    This is the original recipe:

    7 to 8 oz tagliatelle pastsa, cooked and drained

    1 cup mascarpone cheese

    1 ten oz frozen peas, cooked and drained

    2 oz (1/2 cup) prosciutto, finely chopped

    1.5 cups (6 oz) shredded mozzarellea cheese

    butter

    Layer 1/2 of the tagliatelle in buttered 9x9 baking dish. Spoon 1/2 of the mascarpone onto tagliatelle. Sprinkle with 1/2 of the peas and 1/2 of the prosciutto. Top with 1/2 of the mozzarella. Repeat layers. Dot w/butter. Bake in preheated 350 degree oven 20 min or until heated throught. Makes 4-6 servings.

    Now tagliatelle looked like fetticuni in the pic and I didn't have any so I just used rainbow rotini!LOL I did a small amt of research on mascarpone and decided that melting a block of cream cheese and blending in maybe 1/4 of half and half would be at least the same texture. If you don't have prosciutto, ham would work too. I can't say what my version tastes like cuz it's still in the oven.;) ANd I forgot to dot w/butter on top.




    jello and stomach contents.....

    QUESTION: ANyone who knows much about jello, I need help!LOL I'm making 'stomach contents' for snack next week. I have 3 different flavors of jello (strawberry, fruit punch and orange) and quite frankly I want them OUT OF MY CABINET. I want to add cut up bananas, gummy bears and hot chocolate size marshmallows to the jello so I'm guessing I need to alter the recipe some how??? I"m putting this in 5oz cups so it will be sort of small servings. Also do I put the fruit, bears and marshmellows in the cup and pour the jello over it or mix it all up first and then pour into the cup? (Yes, I"m jello ignorant.) They will get served in the cup and I need 14 servings. The package says 4 one half cup servings, but that's bigger than what I'll need. So I'm thinking these 3 packages will be plenty? (I'll not mix the flavors--I'll make them in 3 seperate batches.)

    It's not often that ANYTHING Martha Stewart does is something that I would do at home, but the TV happened to be on while I was folding clothes and I saw this--YUMMY!

    Hush Puppies
     
    Serves 6 to 8
     
     
    2 cups cornmeal
     
    2 tablespoons all-purpose flour
     
    1 teaspoon baking soda
     
    1 teaspoon baking powder
     
    1 teaspoon coarse salt
     
    1/2 cup grated onion
     
    1/4 cup sliced green onion
     
    1 large egg yolk
     
    1 cup buttermilk
     
    6 large egg whites
     
    Canola oil, for frying
     
      1.   In a large bowl, whisk together cornmeal, flour, baking soda, baking powder, and salt. Stir in onions. Combine egg yolk and buttermilk; stir into cornmeal mixture until combined.
     
      2.   In the bowl of an electric mixer fitted with the paddle attachment, beat egg whites until stiff. Gently fold into cornmeal mixture.
     
      3.   Fill a large deep skillet with 2 to 3 inches oil. Heat oil until it reaches 375° on a deep-fry thermometer. Working in batches, drop batter, 1 teaspoon at a time, into the oil and cook, turning once, until the hush puppies rise to the surface and are golden brown, 2 to 3 minutes. Transfer to a paper-towel-lined plate. Serve immediately.

    This seemed so much more realistic than the dessert recipe taht involved an expresso machine, which she stated that she was certain that EVERYONE watching has one at home.  Whatever Martha...........;)
