This mornign felt like a mad rush for some reason. I decided on veggie soup for supper. A version of it anyway. 1 roast (in the CP cooking), 16oz of salsa (been in the freezer for 2 years and I"m tired of looking at it), 1 qt size bag of frozen zucchini, 1 can of cream style corn (I'm out of our corn!), 4 carrots, some potatoes and a qt of homemade V8 juice. It sounds remotely edible anyway.

But I've worked out, Joey's doing school, Mat's half done w/school and I made 7 grain pancakes (w/flaxmeal) for bfast. Thankfully lunch is leftover stuffed shells from last night.

I guilted myself into making up he anatomy lesson plans. I need to drop off the 1st week's plans at library tomorrow for my sub teacher. I have to call the butcher and see if I can get a chicken's foot (to show how tendons work)!LOL That should be fun. I bet I'll be the parent who has to run that experiment!LOL But I'm glad it's done. I have the 1st 2 weeks stuff copied as well (so that I'm not rushed when I get back). Next week I'll probably copy the rest and gather what supplies that I can. I need to make a list and get them together so I can get an exact cost for my class anyway.

In an hour or so I"ll have to shred the roast and dump in the rest of the soup ingredients. I may make biscuits as well. The boys will eat them, but I odn't know about DH. I do make them w/the 7 grain bread and if I do that, he'll usually have a couple. He may not like them, but he won't eat any if I use white bread (which he loves). He obviously has lots more self control than I do!LOL

Veggie soup sounds so yummy especially with roast in it.. I am going to put a roast on for tomorrow.. Thanks for the idea..
