Menu for the family invasion

Unfortunately, I made a roast last night and got the leftovers shredded and broth in it so that I could just dump it in the vegetable soup for tomorrow. I LET IT SIT OUT ALL NIGHT!!!! I was just sick when I got up and saw that sitting on the counter! This means DH will grumble about no meat tomorrow. My sister is making cream of celery (w/potato) soup and I'm making veggie soup (now meatless). Sunday we'll have french toast casserole and cinnamon rolls for bfast. About noon, we'll get out the hummus, monterrey con queso and the regular con queso, salsa and I  might melt some quesadilla cheese to go w/all kinds of chips. At 3, we'll have our enchiladas. We have the boys' Christmas program that night. Monday morning, we'll have sausage bfast casserole and cinnamon rolls. I know it doesn't sound like much, but there will be LOTS of snacking (which is why we're only making 2 main meals). We have Baby Jesus' birthday cake, mint cheesecake (Trader Joe's), fruit, cheese, summer sausage, chips, dips, candy cane shaped fudge, etc, etc. We will NOT go hungry OR thirsty!

I'm NOT looking forward to it. I'll want to eat it all and then my clothes won't fit!LOL
