Sausage Pumpkin Soup Recipe

12 oz. tube Hot Sausage

1/2 c. onion(I cut up 1+1/2)

1 clove minced garlic(I threw in a couple dashes)

1 TBSP. Italian seasoning

2 c. fresh mushrooms diced (I used 3~next time I'll leave 1 in *slices)

1-15 oz. can pumpkin (100%)

4 c. chicken broth (I used 6)

1/2 c. heavy cream

1/2 c. water

Brown sausage, garlic, onion, together...add in mushrooms and Italian seasonings...saute until done.

Add pumpkin to mixture and mix well. Add broth and simmer 20-30 minutes. Stir in cream and water...simmer another 10-15 min. Salt and pepper to taste.

OMG~This soup in unbelievable. The flavors meld so well together. I didn't have the hot sausage....I used a lb. of bulk sweet italian and added crushed red peppers...and finely ground red pepper. You can make this as spicy as you want.

For my tweak....I added a bag of frozen cauliflower...and 1/2 c. frozen corn.
