Sweet Potato Casserole

3 cup mashed sweet potatoes (just treat them like regular potatoes)

1 tsp vanilla

1/2 c brown sugar

2 eggs

1/3 c melted butter.

Mix together; pour into a 9x12 baking dish.

Mix together:

1 c brown sugar

1 c coconut

1/3 c softened butter

SPrinkle over top. Bake 30 min at 350.

I never use coconut and put marshmellows around the outside. I also very rarely measure ANY of this!LOL But this is the recipe that I loosely (obviously!LOL) follow.
