Canned stuffed bell peppers?

Anyone heard of this or know how to do it? Our neighbor was down and we were discussing gardens and he said his wife does this. He's supposed to send a jar back down (DH is hauling hay for him--he's Amish) for us to try. I'm just very curious to see this and what it tastes like! It would let me use up some of those bell peppers! ARe they like tomatoes and just continue to produce until frost??????
