Its not time to put away the canner yet . . .

Just when you thought the canning season was over, its time to can pumpkin.  Pumpkin cans well in a pressure canner.  Just cut your pumpkin, clean out the seeds and save for roasting, and then roast the pumpkin until tender.  You scoop out the pumpkin and cut it up in chunks.  You need hot liquid to cover the pumpkin and this year I had enough liquid in the roasting pan to cover the chunks, but you can also use hot water.  Check your favorite canning book for processing information.  This works good for making pumpkin bread, pies, pancakes, muffins, etc.

I used a pumpkin I purchased this year.  We don't have much use for growing pumpkins.  They take up a lot of room and we only need one for roasting as we don't carve them.  We do not celebrate Halloween so a bunch of pumpkins sitting around would be wasteful and a temptation to our kids.  When our kids lived with bio parents they celebrated Halloween and it is hard for them to sit it out now.  However, I feel very strongly that for a Christian there is no greater hypocrisy than to celebrate Halloween.

Yesterday I also churned butter made yogurt and cottage cheese after visiting a neighbor to buy some raw milk.  It was a fruitful day, but we still have lots of cleaning left to do today.

I have never tried to can pumpkin. I will be harvesting mine in the next week or so. I am planning on using some for Thanksgiving and at least one to make a Pumpkin Stew for Church one Sunday.

I gather you also have adopted older kids. My"littles" came with a great fear of halloween. I'm not sure exactly what it was, not even sure they could put in into words. They like the fact we don't "do" halloween. I do deal with more behaviours this time of year, but each year that gets easier. What we do usually do is go to town the day AFTER and raid the marked down candy isle and also look for fun dress up clothes out of the mark downs. That is now what they look fwd to with halloween. They are also big into planning and inviting people for Thanksgiving. We start talking about who to invite and making invitations about the first of Oct. Then the cards are in the mail are being handed out around the first of Nov.

As I learn my way around blogging I hope to get to know you.

I have been asking and looking all over to see if you could home can pumpkin. I figured you could since you can buy it but I could not find a recipe how to only freezing and drying. Please let me know the 123 step by step. We we're blessed by a pumpkin farmer over here with 16. We don't celebrate Halloween either so that's a lota pumpkin! Have a super Monday!
