The Flu Hit Us and Other Ramblings

The flu hit us hard over the long weekend.  Myself and all five kids were really sick.  I'll save you the details, but I do mean really sick.  It was a good think DH was spared, because he was needed to clean up after everyone.  I so appreciate being part of a partnership and although it was bad, I kind of wondered if maybe I was lucky I was sick and not the one cleaning up.

It was a good thing that we were already for school to start and that I didn't have to think of any last minute shopping.  I made the girls' lunches with little angel sandwiches and stuck a note inside wishing them a happy first day.  My youngest daughter did not recognize that her sandwich was in the shape of an angel and did not eat it.  She thought someone had already taken a bite out of it!!!  LOL!  She told me to mention in the note next time.

Canning really slowed down with all of us being sick.  We're doing one batch of beans at a time.  I have decided that I will need to buy some tomatoes as I will not get enough from my garden.  I have had a horrible time with the peaches and lost about 20% of the jars we canned to spoilage.  I am going to order enough peaches to replace those that popped.  I am pretty sure it is because the jars did not get hot enough in the steamer canner.  We picked the pears and some are ready, but not all so I will transfer the yellow ones to the frig until all are ready to go later this week.  I need to look into getting some more pears as we really love them canned.

We are starting to think about the remodel of our house.  We have been here a couple of years now and have a good handle on what needs to be done.  Some days I didn't think I could make it this long.  Some days I think DH expects me to continue to wait.  However, the time has come.  I have been working on ideas and have drawn several floor plans.  DH and I have talked about it a bunch and he has contacted a builder to help us.  I am sure it will take longer than we think, so I'll let you know how it looks in say . . . 2010!
