Pig Butchering

For the last 9 months Pork has been consuming all of our scraps and leftovers. He has turned them in to some nice meat and yesterday we began our first butchering project. My husband has butchered many pigs, but not quite like this. We began by skinning him. We chose this method as the easiest and cleanest for us - instead of scalding him. We then gutted him and hung him in the barn overnight. Today we will cut him up and put him in the freezer. We will be very busy making sausage and brining the items that will be smoked later. Happy homesteading . . .

I want pigs for the pot but I am scared I'd like them too much & find it hard to follow through.
We do put sheep in the pot & my first experience was rather upsetting - but now we don't name them or get too close a bond......
But pigs are like dogs......

We raised a pig a couple of years ago and on the way to the butchers he fell out of the trailer, What a story, I might it share it one day. He finally made it there tho.
