My Canning Kitchen

The necessity for a canning kitchen reached critical after we purchased new kitchen appliances yesterday.  I got a new range that has that flat top and you can't can on them.  So DH built me a canning kitchen downstairs.  We purchased a pre-fabricated counter top and a two burner stove top for a total out-of-pocket cost of $60.  Using scrap lumber DH built a stand for the countertop that also has a shelf for pot storage.  This morning I tested the burners and while they take longer to get hot, they are hot enough to keep my pressure canner for 90 minutes at over 11 pounds of pressure.  For now I will use the laundry sink to was fruit and veggies and then move them to my "canning kitchen."  While not a large space it will develop over time and work just fine for me.  If I can eventually find a small used stove there is room for it.

I also got the last of the freezers moved (you can read about this on previous posts regarding my cold storage area).  The new cold storage room also got cleaned up.  This room will hold many of our produce items come fall.  I now have all of my food storage and preservation activities located in one area, which has good outside access and is in the cool downstairs of our split level home.  I get so excited when I think of all the possibilities.

Today I have some more canning to do.  I did five quarts of pinto beans already.  We will pick cherries this afternoon and put them up.  They will be the first thing canned in the new kitchen.  I also hope to go to the farmer's market and see what I may be able to pick up.  DH will work on the barn some more today.  He is putting up the metal siding now as it is all framed, 48 by 48 feet and 26 feet tall in the center.  He also has the roof on.  Happy homesteading to everyone.

I am excited to start my canning this year. I think a canning kitchen is a great idea! I wish I could find a little spot out back at my place to build one.
