The beginning of June, just when graduations are happening and school is getting out for the summer, has always marked strawberry season for the Willamette Valley of Oregon. For a homesteader is marks the beginning of preserving season. If you miss strawberries, you don't get another chance. Plus this time of year also means spinach and peas and broccoli soon. In order to stay on top of perserving I also find it helpful to have all of my supplies on hand. This year I have all of the jars washed and ready. The sweeteners are on hand - 5 gallons of honey and 33 pounds of Rapadura. I ordered cases of lids so I have over 1100 on hand. I ordered Pamona's pectin so I have that all ready. Next weekend I will start on strawberry jam and then move to frozen strawberries and strawberry syrup. I am looking forward to all of the wonderful treats I will turn out for my family.
