Our Friday routine was changed a little due the cancellation of our weekly Swim & Gym.  We woke up to an ice storm today.  

Last Sat. we went to the library and picked up some books:

American Girl Samantha's Cooking Studio & Molly's Cooking Studio

Alexis made this recipe from Samantha's. 

Jam Tart Cookies

1. Preheat the oven to 350 degrees.  Spoon the jam into a small bowl and stir until it is smooth.  Set aside.

2. In a mixing bowl, beat the butter and sugar together until they are light and fluffy.

3. In a separate bowl, mix together the flour and salt.  Add the flour mixture to the butter mixture and blend until a dough is formed.

4. Pinch off bits of dough and roll them into 1 inch balls.  Place the balls on a baking sheet about 1 inch apart. 

5. Press your finger into the center of each cookie to make a "well".  If the dough cracks, pinch it back together.  Fill each well with 1/4 teaspoon of jam.

6. Bake cookies for about 10 min. 

-I was reading through Molly's cookbook and I saw a simple recipe for frying potatoes.  Believe it or not, I never made fried potatoes.  That is what we had for lunch today.  We were able to use up some potatoes we had!
