Twice-Baked Potatoes

The other night, we had these for dinner. I'm going to list them as a side dish, but we had these as the main dish, with a salad on the side. Yum!!!

First, scrub four baking potatoes, and pat them dry.


Next, rub them with some olive oil, poke them about 6 times with a fork, and set them on a baking sheet/stone.


Bake them in the oven at 375 for about 1 hour, to an hour and 15 minutes, or until a butter knife inserted in the center, goes in fairly easily.

Meanwhile, cook 8 slices of bacon until crispy. Pat off any excess grease with a paper towel, then coursely chop. Set aside.

When the potatoes are done baking, cut them in half, and let them cool until they can be handled.


Use a scoop, or a tablespoon, to scoop the middles out, into a mixing bowl.


Now brush the whole potato with olive oil again, inside and out.


Lay them all onto the baking stone.

Very finely dice up a small onion, and 2 - 3 cloves of garlic.


In a small skillet, melt 1/2 c (1 stick) butter, and saute' or simmer the garlic & onion in the butter until soft.


Pour the mixture into the potatoes.


Next, add about 1/2 c grated cheese. I used colby jack, but you can use your favorite....along with some salt & pepper...And stir it all together.

***Also add 1 tsp dry parsley, and 1/2 tsp oregano.



Scoop the filling back into the potatoes.


Next top with the bacon.


Now top with about another 2/3 c of grated cheese.

(I left tow without extra cheese on top, because one of my children isn't a huge cheese fan. He does NOT take after his Wisconsinite mother!)

And bake them for another 15 minutes, or until they are just starting to get golden brown on top.
