Roasted Cornish Hens & Sweet Potatoes
Roasted Cornish Hens
(No real measuring needed)
5 cornish hens (1 per person in our house )
olive oil
cinnamon
cumin
kosher salt
3-4 sweet potatoes
I simply rinsed and patted dry the 5 cornish hens and placed them in the roasting pan. Then I cut up some clean sweet potatoes, into about 2 inch slices/chunks. Then I drizzled some olive oil over all of it, and sprinkled cumin and cinnamon on the hens. About 1/4 tsp of each on each bird, and a pinch of salt on each...sprinkling a little cinnamon on the potatoes as well.
Then I popped them in the oven for about 1 hour 15 minutes, until the birds were done. They were delicious, the potatoes were perfect and we ate it with some simple rice.
