Cheddar Ham Chowder
Cheddar Ham Chowder Recipe
2 cups water (or enough to just cover veggies)
10 baby red potatoes, cubed
2 cups frozen mixed veggies
1 small onion, diced
1 tsp salt
pepper to taste
1/4 c butter
1/4 c flour
2 cups milk
2 c shredded sharp cheddar cheese (plus extra for topping bowls)
1 cup frozen whole kernel corn
1 1/2 c cubed fully cooked ham
In a dutch oven, cook veggies, potatoes, and onion in the water. Bring to a boil, lower heat, and simmer covered.
Meanwhile, melt butter in a medium saucepan. Add flour and whisk together until bubbly. Pour in milk. Cook and stir until white sauce is thickened. Add 2 c cheese to sauce and stir until melted and smooth. When vegetables are almost done, pour cheese sauce into the vegetable soup, and stir. Add ham and corn, salt & pepper. Allow to simmer for 5-10 minutes, until ham and corn are hot, and corn is cooked.
Serve topped with additional shredded cheese.
