Menu Plan Monday

Hmm, I seem to post this on Tuesdays. Should I call mine Tasty Tuesday?

 

Monday: Chicken sausage and cabbage stir-fry + extra meal (hot dogs in chili sauce for freezer)

 

Tuesday: Dinner out with my wonderful Dad (Alex’s late night at school)

 

Wednesday: Green salad with roast chicken pieces (roaster chicken from market)

 

Thursday: Sesame-flavored ground chicken in lettuce tacos

 

Friday: apple slices and peanut butter or honey, celery and onion dip

 

Holiday Note:

 

On Saturday I am making a gluten-free Italian rice pie for Easter. I’ll post the recipe soon in case anyone would like to try it. If I had to sum it up, I’d say that it is like a firm rice pudding in a pie shell. With citrus flavorings.

 

So, “if you like rice pudding, and you like orange zest, you’ll love this!”

 

Making sweet and savory pies with rice, wheat, or pasta is an Italian Easter tradition. I like to keep this tradition going, in honor of my father’s mother. How I wish I could have met her!

Your menu sounds great. Save me some, LOL.
You said something about the sending in the rebates at my blog. Let me tell, if I had to mail them in, I wouldn't. Rite Aid does this thing where you can do it on line. You open a free account and type in a few things off of the receipt and viola, your done, its so easy. Then you leave it there untill the end of the month so you can add more items later. When your ready to get your check you click, "send check" and they do. Like I said, it's soo easy, if it wasn't I wouldn't be doing it. LOL LOL.......thanks for stopping by my blog...........Kitty

The only way I could post my menu plan and have it be accurate is if I posted it the week after it happened! (LOL!) Anyway, are you making the gluten-free dish for health or diet reasons? Am just wondering. My father-in-law has celiac disease and cannot eat gluten at all, ever.
