Today, I am going to treat you with another very easy and very french cake recipe, It is called clafoutis and we usually bake it with cherries, this is a real countryside cake.

In my favorite  French/English Harrap's dictionnary clafoutis means cherries baked in batter

Of course, we don't have fresh cherries right now in France (not before june !), but I make it with canned or frozen cherries.

I have a clafoutis right now in my oven, so I'll be able to post a pic of it

 

Now, the recipe:

First what you need,

3 eggs

half a liter of milk (about 2 cups)

80 gr of flour (1/4 cup)

40 gr of sugar (1/8 cup)

1 sachet of vanilla sugar (2 tea spoons)

1 can of cherries

1 or 2 drops of bitter almond extract (of course, that's optionnal, but it tastes better with it)

 

Beat the whole eggs with sugar & vanilla sugar, add the flour, stir well and add the milk, the mixture will be very liquid, don't be afraid, that's all right  

Add the cherries and the bitter almond extract

Pour in a greased baking tin, and bake at 375° F, 1/2 hour ( more or less it depends of your oven)

Allow it to cool completly before eating...

Very simple and yummy !

• Sunday 12 March 2006 - Yoghourt Cake (gâteau au yaourt)

The principle of this recipe is to use the empty  jar of yoghourt to measure all the ingredients.

In France, yoghourts are sold in packs of 4, 8, 12 or 16 and each yoghourt contains 125 ml.

I make my own yoghourt with a yoghourt maker, in batches of 8/125 ml yoghourt.

 

This recipe is a popular one! In general, when a mother wants to teach basic baking to a little girl she’ll use this one

 

You need :

1 plain yoghourt jar (125ml, thats about ½ cup)

3 eggs

1 ½ jar of sugar (3/4 cup)

½  jar of sunflower oil (or whatever oil you prefer)

3 jar of flour (1 1/2 cup)

1 sachet baking powder (2 tea spoons)

Add any flavoring you have on hand, often, I put some chocolate chips, or vanilla, or pieces of apple…

If you like it you can flavor it with a table spoon of rum.

 

1)     Mix yoghourt and sugar in a large bowl

2)     Add the beaten eggs, flour, baking powder, oil

3)     Put the mix in a greased cake tin and bake at 350°, 25-30 mns (depends of your oven)

 

Voilà

Just a quick post to answer your questions about the Brioche:

- You don't have to melt the butter, just cut it in pieces and put it over the flour in the bread maker.

- Vanilla sugar, is simply vanilla flavored sugar, if you don't find it in stores you can easily make it from scratch by putting 1 or 2 splitted vanilla  pods in a jar of sugar for at least one week.

Hello Ladies

First, I want to thank you for all the nice welcome messages I have received, they have been a real blessing !!

Today I want to share with you a very good recipe for the ones who own a bread maker.

This recipe is a scrumptious treat for your family.

I use to prepare it on saturday evening and I set the delayed start function early in the sunday morning... so we are awaken by the delicious smell of the Brioche

Well, let's go!

(I have translated the metric measures we use in France, I hope I haven't made mistakes)

You need:

3/4 cup of milk (165 ml)

2 tea spoon of orange-flower water

3 egg yolks

1 tea spoon of salt

1 1/2 cup of all purpose flour (375g)

1/2 cup of butter (100g)

3 table spoon of sugar

2 sachet of vanilla sugar (or 2 tea spoon)

1 sachet of instant dry yeast (or 1 tea spoon)

Put all ingredients in the bread maker (you can melt together the milk, the egg yolks and the orange flower water before), use the program "sweet dough".
