Today, I am going to treat you with another very easy and very french cake recipe, It is called clafoutis and we usually bake it with cherries, this is a real countryside cake.

In my favorite  French/English Harrap's dictionnary clafoutis means cherries baked in batter

Of course, we don't have fresh cherries right now in France (not before june !), but I make it with canned or frozen cherries.

I have a clafoutis right now in my oven, so I'll be able to post a pic of it

 

Now, the recipe:

First what you need,

3 eggs

half a liter of milk (about 2 cups)

80 gr of flour (1/4 cup)

40 gr of sugar (1/8 cup)

1 sachet of vanilla sugar (2 tea spoons)

1 can of cherries

1 or 2 drops of bitter almond extract (of course, that's optionnal, but it tastes better with it)

 

Beat the whole eggs with sugar & vanilla sugar, add the flour, stir well and add the milk, the mixture will be very liquid, don't be afraid, that's all right  

Add the cherries and the bitter almond extract

Pour in a greased baking tin, and bake at 375° F, 1/2 hour ( more or less it depends of your oven)

Allow it to cool completly before eating...

Very simple and yummy !

This looks so yummy and I want to make it. Could you explain what vanilla sugar is? Would that be like plain vanilla extract or is it something different?

Vanilla sugar is sugar flavored with vanilla, you can make it by ading a sliced vanilla glove to a jar of sugar and wait about a week before using it. Of course, I think you can use a lille bit of vanilla extract instead.
