Little French Homestead

• Thursday 20 April 2006 - A French favorite: le poulet rôti (roast chicken)

Posted in cooking

It's been a while since I post a recipe on this blog

Today I'm going to talk about something very simple but so yummy... the roast chicken.

Also, I'm curious to know if in other countries you cook the roast chicken the same way as we do in France.

This is the typical sunday lunch meal, the traditionnal version has French fries as a side dish, but I prefer to add some sautéed zucchinis instead (guess why )

The recipe:

One chicken, biggest as possible

Salt, pepper and thyme inside of the chicken

Some olive oil on the chicken

I put it in a glass oven dish, and I add alot of garlic gloves not peeled ( we call them "ail en chemise" ~ garlic in shirt) and some pieces of tomatoes around it, I add next a little water

Then cook in a hot oven, during almost 1 1/2 hour (depends of the oven and the size of the chicken)

During the cooking, baste often, if necessary add some more water to have enough juice

I have a kind of dropper to do that, it's a very practical gadget ! (you can see it behind the dish on the picture.

I love how simple this sounds....I'm going to try it. Why do you leave the skins (or shirts) on the garlic?

I used to speak french, and it has been a number of years since I have had anyone with whom to practice, but I found it helpful when mes amies would correct me.

The "dropper to do that, it's a very practical gadget" is called a "baster," for basting (re-adding the juices).

I was pleasantly surprised to see you here... I am afraid I have a negative view of your countrymen (based on a few - mostly bad - personal experiences while I was there), and you on this blogsite has forced me to re-evaluate my views. Merci.
