This is Bonnie Blue Malachi owned by Mr. Nathan Halloway of Five Points TN.  Malachi is the sire to this years Nubian kids to be born here on our farm.  Malachi was chosen to be on this years  qualifying young sires list on ADGA as one of fine quality for breeding with... I am excited to see what he gives us this year.  Mr. Halloway has been telling me I should buy Malachi from him to use again and again with the does and we are thinking on this
investment for our herd.

This Beautiful Doe is Leah standing with younger doe Love-Branch Allison who is owned by Mr. Nathan Halloway of First Light Goats in Five Points TN.  Leah will be registered at some point this year and used in my Nubian Breeding Program and my mini nubian breeding program also. She is a smaller doe, but so nice looking.

• 6 February 2009 - Homemade Pita Bread

My 16yr. old daughter had made some falafel and hummus this evening and really wanted some pita bread to eat it with, so I found a recipe for homemade pita bread and gave it a try.  It actually turned out pretty good.  It was a lot easier than I thought it would be and everyone liked it. 

I searched online for recipes as well as in a breadmaking book that I have.  Each recipe was a little different so I just went with one from my book and exchanged 1 cup whole wheat flour for one of the cups of white flour in the recipe.  I was so thrilled with the results that I took pictures, ha!  I don't think I'll ever want to buy pita from the store again.  The recipe I used is below the photos.






Traditional Pita
MAKES 12 PITAS

1 pkg. active dry yeast
2 Tbls. honey
1 tsp. salt
2 cups hot water (about 125*F)
5 to 6 cups unbleached enriched white flour

In large bowl combine yeast, honey, salt, and hot water - stir well.
Add 4 cups flour 1 cup at a time, mixing in each cup well with wooden spoon. (this is where I substituted 1 cup whole wheat flour)
Spread 1 cup flour over kneading board and scrape dough from bowl onto board and knead in.
Add as much of remaining flour as required to make a medium-stiff dough, then knead a few more minutes.
Drip a tsp. of oil into scraped out mixing bowl and drop dough ball inside, turning to oil all sides.
Cover with dry towel (I used saran wrap) and set to rise in very warm, draft-free place for about 1 hour.
When dough has doubled in size, punch down and knead gently to release any big bubbles.
Set oven to 450*F. (in this book the author tells you not to preheat the oven but set it at temp. just before baking...apparently, this give the bread a few minutes of rise time before the yeast is killed)
Turn risen dough onto lightly floured board, shape into round and cut into 12 equal pieces.  (like a pie)
Roll and shape each piece into ball and place on floured board.  Cover with towel (or saran wrap) and let rest for 10 minutes.
Grease large baking sheet.
With palm of hand, pat, press, and pound dough ball until flattened into round about 1/4 inch thick.  (I tried patting, pressing, and pounding, but ended up using my rolling pin which worked better for me)
Gently lay on greased baking sheet.  (I fit 4 on a sheet but I have large square air-bake sheets)
Put baking sheet directly on the bottom of the oven and bake about 5 minutes, or until bottom color shows dark brown.  They will puff up in the oven.
Serve straight from the oven.
If wanted for sandwiches, cool briefly on wire rack, then cut in half and open to insert filling.
Repeat for remaining pita rounds.  Do not regrease baking sheet.

• 6 February 2009 - Hubby's Birthday Circus

My Husband's birthday was Monday, but do to unforeseen circumstances, we weren't able to celebrate it on that day.  So, last night, our kids put together a special circus show in honor of his birthday.  :)

I helped them put up a curtain, made out of bedsheets, between the living room and dining room, but everything else they did themselves.  They made animal masks and hats for themselves to wear along with tickets and circus hats for the "audience" and served us popcorn in homemade paper popcorn holders. 


My oldest daughter played some music she had on a CD for background music and the show began.  The performances included:

A lion tamer act performed by my 8yr. old son as the lion and my 10yr. old daughter as the tamer.
A tumbling act performed by my 12yr. old daughter.
A bee chasing the clowns act performed by all of the 3 above.
A horse and trainer act performed by my 12yr. old and 8yr. old, with my tumbling daughter costumed as a horse and walking around in a back-bend while my 8yr. old "led" her around with a carrot.
And there was a little dancing done by the two girls.

I tried to take pictures with my cell phone but most of them didn't turn out so well.   I really miss my digital camera.

I believe my husband had tears in his eyes when they brought out his candle-covered-flaming cake at the end.  :)

It was wonderful.  These kind of gifts given by children are the best gifts any parent could ever want to receive.  Thank you God for our beautiful children.  What a blessing they are!

• 3 February 2009 - It's Been Awhile

When I recently returned to this site and my blog, I saw that I hadn't been on here since this past June.  Boy, how time flies.

It was at the end of June that I had left AR to come back to IL.  My hubby had just recently gotten down to AR, and I had to get up here to tend to some things.  He stayed down in AR with the kids until he just couldn't stand for our family to be apart any longer and then brought the kids, 5 cats, and two dogs, up to IL....all packed up like sardines in our Van.  Our living situation has been so weird for the last year and a half. 

While here in IL, one of my older brothers died in August after battling many health issues and being on dialysis for years.  I had been at the hospital with his wife the very evening and she was struggling with seeing him the way he was, barely even conscious, and she decided to go home and try and get some sleep.  After dropping her off at home, I had just about walked in the door myself when I got the call from her that he had died just 15 minutes after we left.  It just seemed so unbelievable, even though he had been sick for a long time.

Then at the end of October, I had gotten the news that my brother-in-law, who was living in AZ  and had been suffering with leukemia, had passed away.  My sister, his wife, had spent years taking care of him and neglecting herself.  While he was in the hospital, just before he died, my sister ended up at her doctor's because she had collapsed.  She ended up having emergency surgery because there was bleeding on her brain and the doctors had no idea why.  During this time, my brother-in-law did pass away, and my sister was still in the hospital in recovery.  To make a long story short, she didn't end up recovering, but also passed on.  It was almost too shocking to understand or bear.  She has 3 grown, but still young, children, who need a lot of prayer and support.

After all this happened, by November I had found myself in a pretty bad depression.  My heart was crying out to God, but I still felt the darkness crowding in close around me.  It was so hard to get up and even do the simplest things.  Thank God for His help, and for my husband and children's love and patience with me during this time.  I can agree with David:


I waited patiently for the LORD;
And He inclined to me and heard my cry.
He brought me up out of the pit of destruction, out of the miry clay,
And He set my feet upon a rock making my footsteps firm.
He put a new song in my mouth, a song of praise to our God;
Many will see and fear
And will trust in the LORD.
~Psalm 40: 1-3

Both my parents and a different older brother had already died some years ago.  I'm the youngest of 9 siblings.  I know that physical death is part of this life on earth, but for some reason, it still surprises you and leaves it's mark on you.  I am so thankful that God has not left us but in love, by faith, and through grace, has redeemed us with the life and death of His own precious Son, our own Lord and Saviour, the sweet Lamb of God. 

To You, O LORD, I lift up my soul.
 O my God, in You I trust,  Do not let me be ashamed; 
Do not let my enemies exult over me.
 Indeed, none of those who wait for You will be ashamed;
 Those who deal treacherously without cause will be ashamed.
Make me know Your ways, O LORD;  Teach me Your paths.
 Lead me in Your truth and teach me, 
For You are the God of my salvation;  For You I wait all the day.
 Remember, O LORD, Your compassion and Your lovingkindnesses, 
For they have been from of old.

We are still in IL, not having been able to get back down to AR, but I'm thankful that I was able to be here during these times.  I am believing God arranged for me to be back here so I could be with my family.  I know that so often I cannot see the path ahead, only God can, I have nothing else to do but to trust Him...in everything.   And seeing the ice storms that have passed through that area, I know we would mostly likely not have been able to survive in our little, leaky, shack....especially if we had lost electricity.  Thank God for warm houses, and strong roofs, and beds to sleep in. 

My heart and prayers go up for all those suffering and enduring.  Peace and love and God's blessings be with you.
