True Humility
And be clothed with humility: for God resisteth the proud, and giveth grace to the humble.
1 Peter 5:5b
Humility may be described as a righteous estimate of ourselves as God sees us. It is not a cast-down, self-despising spirit, but a simple feeling of unworthiness, a sense of our own insignificance. Never does it leave room for pride and self exaltation.
A drunkard came home at midnight with a crowd of his drunken friends. He demanded that his Christian wife make supper for them. She promptly complied. After they were done eating, one, who was more sober than the rest, and knowing of her disapproval of their conduct, asked how she could respond so kindly to their unreasonable request. She said that if her husband had died in this miserable condition, he would be miserable forever. It was through this woman’s act of humility to these unreasonable and corrupt men that her husband was saved.
Jesus in His humility stripped Himself of His rightful dignity when He gave Himself up as a servant and became a man. This was not the end of His humiliation; He stooped still lower, in obedience. He went to the shameful cross where He suffered much abuse by His own people. Because of His humiliation, God was so well pleased that He gave Him a position, “That at the name of Jesus every knee shall bow.”
We may say it was only right for Jesus to give himself like this, but what should our attitude be to humility? “Let this mind be in you, which was also in Christ Jesus” Philippians 2:5). Unless we are converted, we cannot experience true humility. Humility brings with it a childlike spirit that manifests itself in meekness, submission, and
lowliness in heart (Matthew 11:29).
As we make our pilgrimage here, may we also be clothed with humility and take opportunities to serve others for the kingdom of God’s sake.

Another recipe from the classic zucchini cookbook.. Note I haven't tried these recipes yet but will soon..I might do these this weekend..

Freezer Bread and Butter zucchini chips
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
4 cups thinly sliced zucchini
1 onion thinly sliced
1 1/2 teaspoon salt
1 1/4 cups distilled white vinegar
1/2 cup sugar
1 teaspoon ground turmic
1/2 teaspoon celery seed
1/4 teaspoon black pepper

1~Combine the zucchini,onion,and salt in a large bowl.Toss to mix and set aside for at 2 hours.Drain but do not rinse.
2~In a nonreactive saucepan,combine the vinegar,sugar,turmeric,celery seed, and black pepper.Heat just enough to dissolve the sugar.Pour over the zucchini mixture . Toss to mix.
3~Pack the zucchini and brine into freezer containers,leaving about 1 inch of headroom.Label for up to 6 months.
4~Defrost in the refrigerator for at least 8 hours before serving..
Makes about 4 cups..

Please note!!!!! Slice Zucchini as thin as possible A food processor or mandoline yields the best results..
This can also be used to make freezer pickles..

My plans is to start listing recipes here to share..Now I haven't made any of these myself ..But I plan too..I will share a recipe now ..And plan to do more tomorrow.. Enjoy..

Zucchini Pancakes
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
2 medium sized zucchini grated
1/2 teaspoon salt
2 eggs lightly beaten
1 1/2 cups milk or more as needed
2 tablespoon canola oil
2 cups pancake mix
1-2 teaspoon butter
use maple syrup for serving optional

1~ Comine the zucchini and salt in a colander. Toss to mix and set aside to drain for 30 minutes.
2~In a medium sized mixing bowl combine the eggs,milk and oil . Beat well,stir in the pancake mix and set aside torest for 30 minutes.
3~Squeeze the zucchini to eliminate any excess moisture.Fold the zucchini into the pancake mixture. If neccessary add a little more milk to think the batter.
4~Preheat a griddle or large skillet over medium -low heat.Pre-heat the oven to 200F.
5~On the griddle melt a teaspoon or two of butter.When the foam subsides,ladle the batter onto the griddle.Adjust the heat as needed so that the pancakes brown on the bottom in 2-4 minutes.Flip the cakes and cook on the second side for 1-2 minutes.Place on an ovenproof plate and keep warm in the oven while you use the remaining batter to make more pancakes. Continue until all the batter is used.
6~serve hot with maple syrup if usings
Serves 4-6
Variation:To make savory zucchini pancakes. Add 1/4 cup freshly grated parmesan cheese to the batter and proceed as above.

Creamy Mustard Zucchini Slaw
2 medium-size zucchini
2 carrots grated
pinch of salt
4 tablespoons mayonnaise
1 tablespoon brine( liquid) from dill pickles
1/2 cup toasted sunflower seeds
freshly ground black pepper.

1~In a colander,combine the zucchini and carrots with 1teaspoon salt.Mix well. Set aside to drain for about 30 minutes.
2~Squeeeze out as much moisture as possible from the vegetables.Transfer to a medium sized mixing bowl.
3~Combine the mayonnaise,brine, and mustard in a small bowl.Blend well.
4~ Add the mayonnaise mixture to the vegetables.Mix in the sunflower seeds. Taste and add plenty of pepper. It probably won't need additional salt.
5~Let stand for about 30 minutes before serving or refrigerate for up to 4 hours and mix well before serving.
Serves 4
The sunflower seeds add the crunch the grated zucchini lacks. This slaw is particularly good on sandwiches..

I was also thinking that We need to pray for our Country God punished all Isreal some times when only some of them did wrong and us as a Country need to pray that God will forgive our county! We need to as it says in Ephesians 6-21 Finaly my brothren, be strong in the Lord and in the Power of his might put on the whole armor of God that you may be able to stand the wiles of evil. A fellow HSler hosted a 'playdate'. WHAT HOOT! Those ladies are a riot! Joey was a bit of a pill, but I guess he got over it. I don't know if he's missing Mat or what.
And next week (when I host), one lady is bringing me kombucha 'scobies'?? The starts!LOL I learned of a few other things as well--where I can get raw milk (to make kefir), different butchers, etc. And another lady is bringing me more goat's milk soap! She also makes and sells goat milk cheese and makes some dip that she's supposed to bring next week. The ladies who had it were raving about it!
Probably the funniest thing was that there were 2 ladies there and they both looked familiar. I'm pretty sure that one is DH's customer. I met her at one other HS event. I think we might have scared her off this time tho.........LOL I heard the other one mention horseman's name, but it wasn't clicking so I figured that I had just seen her there at one time or another. So she asks me if I am 'the one'. I said, I don't know, but you mentioned horseman's name and I live on his road so I"m going to guess yes!ROTFL! Turns out she's the lady who stopped by in the dead of winter once and Dh had the quilt nailed to the front door and I had to talk to her while I was stooped over thru the screen in my bedroom window (the porch runs along there)!ROTFL! So we had a lovely chuckle about how DH winterizes the inside of hte house......:)

Five Steps to Repentance
Bring forth therefore fruits meet for repentance.
Matthew 3:8
I have often wondered how we can apologize for something like getting angry at someone, and then turn around and do it again only a short time later. We try ever so hard to conquer a habit, but we seem to find no victory. Maybe it is because we do not really understand repentance. How do we find real victory over sin?
1. Acknowledgment. Psalm 51:3. The first thing we must do is acknowledge that we have sinned. If we do not acknowledge that we have wronged a brother when we became angry at him (or whatever else we have done) then we have missed the first step.
2. Godly sorrow. 2 Corinthians 7:10. Many times we are sorrowful simply because others have discovered our sin. “What will others think if they hear that I’m a bitter person?” Godly sorrow means we are remorseful that our sins have hurt our Lord.
3. Confession. 1 John 1:9. We may reason that we have said we are sorry, so what more is needed? Or, if ours is a private sin, we may have only confessed it to God, thinking that is enough. But it is not. I remember a time when I did something wrong that involved no one else but myself. One day I became convicted of my wrong and repented of it. Yet I did not find peace until I confessed it to a responsible person. “Confess your faults one to another.”
4. Restitution. Matthew 5:24. We must also be willing to make wrongs right at any cost. Some relationships cannot be restored, but we need to be willing to do our part.
5. Forsaking it. Proverbs 28:13. If we truly repent, we will want to quit sinning. These five steps must be complete before we have really repented from sin. This does not mean we can escape the consequences for sin, but we can accept God’s grace as sufficient for us and begin to overcome our sin.

Well I wound up just not feeling well today. I know this is all weather related, but it seems to be getting worse the older I get?!?!?! Plus I think I'm getting SICK!!!!!!!!! UGH!!!!!!!!!!! At any rate, I made the chicken salad--just mixed up some chicken, mayo, celery, pecans adn honey. I also have the stock done.
I think the only thing left is to get Mat's history/geography on the computer for when he gets back.
But that was put on hold cuz I tried to nap. Not very well since the phone kept ringing. Mat was in the basement playing quietly, which was nice.
