The very first thing that popped into my mind was...and this depends on where you live...the candy thermometer doesn't work very well for higher elevations.:D We live in Colorado and when we made jam for the first time...well, it came out more like fruit leather;) When you are at a higher elevation, the candy thermometer won't read the same as it would if you were at sea level. So even though our jam had hit soft ball stage an hour before, that little red ball just wasn't quuiitte where it was supposed to be! I didn't check to see where you live, that's just my tip for the day! have fun!
