CHEESEBURGER 'N' FRIES CASSEROLE

4 pounds lean ground beef

2 cans cream soup

2 cans cheddar cheese soup

2 packaged (20 oz each) frozen crinkle-cut French fries

 

In a skillet, brown the beef, drain. Stir in soups. Pour into two 13x9x2 baking dishes. Arrange French fries on top. Bake, uncovered, at 350 for 50-55 minutes or until the fries are golden brown.

BACON CHEESEBURGER RICE

3 pounds ground beef
4 1/4 cups water
2 cups barbecue sauce
3 tablespoon prepared mustard
6 teaspoons dried minced onion
1 ½ teaspoon pepper
6 cups uncooked instant rice
3 cups shredded cheddar cheese
1 cup chopped pickles
15 bacon strips, cooked and crumbled

In a large sauce pan over medium heat, cook the beef until no longer pink; drain. Add water, barbecue sauce, mustard, onion and pepper. Bring to a boil; stir in the rice. Sprinkle with cheese. Reduce heat; cover and simmer for 5 minutes. Sprinkle with pickles and bacon.

 

Freezer French Fries Recipe

Make french fries with your once a month freezer cooking.

Potatoes
Boiling water

Cut potatoes into strips for french fry sized pieces. Bring a large pot of water to a boil, and blanch the fries for one minute. Drain and allow to cool. Freeze on a cookie sheet (flash freezing). Once frozen, transfer into a Ziploc bag or freezer container.

To use: Remove from freezer and thaw. Once thawed, deep fry in hot oil until golden brown. Drain and serve.

Freezer French Toast Recipe

Make your own freezer french toast rather than buying similar commercial frozen ones from the grocery store! Makes 16 slices for quick breakfasts.

5 eggs
1 1/4 cups milk
1 1/2 tablespoons sugar
1/2 tsp salt
16 slices white bread

Heat oven to 500F. Combine eggs, milk, sugar, and salt, mixing well. Dip slices, then place on baking sheets sprayed with non-stick cooking spray. Bake about 5 minutes, until bottom is golden brown. Flip and cook for 2 more minutes. Cool then freeze in single layer. Once frozen (about two hours) they can be packaged individually or placed in a single freezer bag.

To cook:
Remove from freezer, and heat in toaster or toaster oven, then serve.

Freezer Pickles Recipe

7 cups cucumbers, thinly sliced (skins intact)
1 c. green pepper, chopped
1 c. onion, chopped
2 c. sugar
1 c. white vinegar
1/2 tbsp. salt
1 tsp. celery seed

In large bowl, combine cucumbers, green peppers and onions. In a separate bowl, mix sugar, vinegar, salt and celery seed, then pour over vegetable mixture. Place in refrigerator, stirring daily, for five days. Then place in freezer container and freeze.

To serve, only allow to thaw slightly, these are best partly frozen!

Easy Chicken Pot Pie Freezer Recipe

1 pkg frozen peas & carrots
1 8oz can small whole onions, drained
1 small can mushroom pieces
2 cups cooked & cut-up chicken pieces
2 cups chicken gravy
Pie crust (frozen or homemade)

Combine all ingredients well and pour into 9" pie pan. Cover with pie crust, pressing edges into foil pan. Freeze as is for one hour, remove, wrap with freezer wrap and label, then freeze.

On cooking day:
Remove one and a half hours before baking, remove from freezer to thaw. Preheat oven to 450F. Cover edges of pie crust with foil to prevent the crust from burning. Bake for 1 hour and 15 minutes, or until crust is brown and mixture inside is hot. Remove from oven and allow to sit for ten minutes before cutting and serving.

I was just looking last night for a french fry recipe and freezing them afterwards. All the recipes I found said to fry them at 375 degrees for 5 minutes then drain and cool and freeze. Your method sounds easier ;- ) Are yours crispy when fried after freezing?
