Ok, this is something I am seriously wanting to do.  I am able to get my milk straight from the farm (raw milk) for 2.00 a gallon and at that price I would like to try my hand at making cheese.  I  have my eye on a kit from the New England Cheesemaking company for making mozerella and rigotta cheese.  Any advice on cheesemaking?  Thanks.

I started this last year- and we love our cheese. It's an art! I suggest forget the starter kit and get the video. It come w/ the four little books in which are recipes and tips and directions. Get your cultures and rennet and cheesecloth. These are not a better deal in the starter kits.
I LOVE the video- makes it seem so easy, and it really is- just very time consuming.

First of all, thanks for visting my Blog the other day......I did want to say that It was not my poem, but I do not know the author! I'm sorry for the confusion! :::blush:::

Regarding cheesemaking, if you visit my blog and look under Cheesemaking, you can start making cheese without spending any money at all! I have my favorite recipe posted there.

The soft cheeses are the easiest to make and are best for newbies (like you and me!) and the hard cheeses are for more advanced folks. I'm not there yet! I make cottage cheese, ricotta cheese, the vinegar cheese listed there which is really versatile, and my absolute favorite is Feta cheese. these are all very easy to make and will build your confidence and experience if you start with the soft ones and work your way up. All you need is some rennet. I get mine from Hoeggers and again, I have thier Link under *Dairy Goats*. :o)
