• May. 18, 2007 - Making Low Carb Bread etc.

Well I have started experimenting today with making low carb bread.  I have searched and searched the internet for a simple recipe (where I have all the ingredients) that doesnt use artificial sweeteners (or any sweeteners for that matter), doesnt call for soy flour or protein powder, egg white powder etc.....AND.... I havent found it.  I did find a recipe that was kind of close and inspired me to try something on my own. 

Here is the recipe I found:


NGREDIENTS:

  • 2 cups flax seed meal
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 1-2 T sweetening power from artificial sweetener
  • 5 beaten eggs
  • 1/2 C water
  • 1/3 C oil

PREPARATION:

Preheat oven to 350 F. Prepare pan (a 10X15 pan with sides works best) with oiled parchment paper or a silicone mat.

1) Mix dry ingredients well - a whisk works well.

2) Add wet to dry, and combine well.

Make sure there aren't obvious strings of egg white hanging out in the batter.

3) Let batter set for 2-3 minutes to thicken up some (leave it too long and it gets past the point where it's easy to spread.)

4) Pour batter onto pan. Because it's going to tend to mound in the middle, you'll get a more even thickness if you spread it away from the center somewhat, in roughly a rectangle an inch or two from the sides of the pan (you can go all the way to the edge, but it will be thinner).

5) Bake for about 20 minutes, until it springs back when you touch the top and/or is visibly browning even more than flax already is.

6) Cool and cut into whatever size slices you want. You don't need a sharp knife - I usually just cut it with a spatula.

At 12 servings, each piece of bread has less than one gram of carbohydrate - .8 to be exact - plus 5 grams of fiber.


Here is what I am experimenting with (it is in the oven right now)

1.5 cups of flax meal
1.5 cups of whole wheat flour (freshly ground prairie gold...ok so it was ground last night)
3 eggs
2 TBSP Olive Oil
1 TBSP Molasses
1/2 c. kefir  ( I needed to use some up)
1 tsp salt
1 TBSP Baking Powder (Rumfords)


Bake in 350 oven....not sure for how long yet.  

I will let you know how it turns out.  I know it will have more carbs than the previous recipe because of the whole wheat flour and TBSP of molasses, but it she be at least half the carbs you find in a regular loaf.  I wanted the eggs and milk for more protein....I think kefir is less carbs than regular milk because the kefir grains eat the sugars in the milk.

I have thought of making some low carb bread, but I usually just make things w/my 7 grain flour. That's so much better than white or wheat anyway.
