Gena sure has been asking a lot of questions lately over at Smoky Mountain.  :)  This time she wanted our mix recipes.  I just recently bought a book called "Make-a-Mix" by Karine Eliason, Nevada Harward & Madeline Westover.  It has 306 recipes to save time and money.  Make with 67 easy do-it-yourself mixes. It is available at Amazon.  I havent really started it though as I want to get some containers to keep these mixes in, but thought I would mention it in case somebody wanted to check it out.

There is one mix that I do make that I use as a substitute for Bisquik and it works pretty well. It is another winner from my Better Homes and Garden Cookbook.


"Easy Biscuit Mix"

Use shortening that does not require refrigeration for this handy mix.

10 cups all purpose flour or  6 c. all purpose & 4 c. whole wheat flour
1/3 c. baking powder
1/4 cup sugar
2 cups shortening
2 tsp salt

In a bowl stir together flour, baking powder, sugar and salt.  Cut in shortening til mixture resmbles coarse crumbs.  Store in an airtight container for up to 6 weeks at room temperature or for up to 6 months in the freezer.

Listen now, I sure ain't wanting to wait 6 weeks to use that "easy" biscuit mix !! Do you have any "easy" bread recipes ?? Money is a little tight and I was thinking of making Roy some bread for his sandwiches !! I can cook almost anything but biscuits always turn out little and hard, so I need an easy, almost foolproof bread recipe !! {LOL}

Kelly, you dont have to wait six weeks before you can use it. That is how long you can store it at room temperature!

I have that book! I so need to bring it back out! I didnt use it much being a working full time mom but I have my sights set on being a sahm after easter so I need to dust it off and take another look soon.

It is great!! I've had it for nearly 30 years. I'm glad to see it's still around. I have been making my own "bisquick" for that long ... it is easy. I used to make it in large quantities and store it in a five gallon bucket. But now with just two of us, I make a gallon jar at a time.

And if you like it like I do, it won't LAST 6 weeks!!!
