Gena sure has been asking a lot of questions lately over at Smoky Mountain.
:) This time she wanted our mix recipes. I just recently
bought a book called "Make-a-Mix" by Karine Eliason, Nevada Harward
& Madeline Westover. It has 306 recipes to save time and
money. Make with 67 easy do-it-yourself mixes. It is available at
Amazon.
I havent really started it though as I want to get some containers to
keep these mixes in, but thought I would mention it in case somebody
wanted to check it out.
There is one mix that I do make that I use as a substitute for Bisquik and it works pretty well. It is another winner from my Better Homes and Garden Cookbook.
"Easy Biscuit Mix"
Use shortening that does not require refrigeration for this handy mix.
10 cups all purpose flour or 6 c. all purpose & 4 c. whole wheat flour
1/3 c. baking powder
1/4 cup sugar
2 cups shortening
2 tsp salt
In a bowl stir together flour, baking powder, sugar and salt. Cut
in shortening til mixture resmbles coarse crumbs. Store in an
airtight container for up to 6 weeks at room temperature or for up to 6
months in the freezer.

Kelly, you dont have to wait six weeks before you can use it. That is how long you can store it at room temperature!
