Reading others blogs about homemade bread recently started me baking on
Mondays. Today I made 2 loaves of white by hand....then I had
enough flour to do a loaf in the bread machine...or so I thought.
I was using a half cup measure and realized I was one and a half cups
short of flour. This after I had already added the wet ingredients and
then put the 2 and a half cups of flour already in the bread pan.
I let it sit for a couple of hours...then said maybe I sould
experiment. So I added one and half cups of potato flakes (I
wanted to get that junk out of the pantry anyway)..I then came across
some flax seeds, ground some up in the coffee grinder (after wiping the
coffee grounds in it, that is a little bunny trail in itself) and threw
them in...watched it mix...to dry added some water until it was
the right consistency...this is where I stopped and thanked God for the
making bread from scratch experience, so I knew what it should feel
like, closed the lid of the bread machine and said a prayer. 3
hours later I opened the lid to a perfect loafe of potato flax seed
bread. It was a tad salty since the flakes probably had salt
added to them, but after all the I was pleased with the bread, even
though it is not on the top of my list of favorite bread flavors!
Dragged out my breadmaker video and watched again to see all the neat features. I have a Breadman Ultimate
and love it! It does so many things and has a lot of neat
features. Not only can you make regular loaves, you can do cakes,
jams, dough only feature, bake only feature, batter breads etc.
It has a special lid where you add fruit and nuts so it can be added in
at the right moment without you having to worry about it. Click

what I paid for it).
I tried the cake feature tonight and after adding a little more bake
time (I had it on the wrong crust setting) it came out perfect and
yummy. For this (I am ashamed to say I didnt make it from
scratch) I just threw in the water, oil (I used mayo because I used the
last of my oil making bread) and eggs, selected the batter breads
setting (should have selected the dark crust setting) and an hour and a
half later I had a pefect cake that I didnt need to mess up a mixing
bowl and a baking pan for! YIPPEE.
Anyway that is what I have been doing today!
