I was trying to use up things from the garden and extra eggs when I came up with this dish.  The whole family loved it.

 

Egg Skillet Supper

 

1 dozen eggs

1 large yellow tomatoe

splash of milk

1/2 onion chopped

salt and pepper to taste

mrs dash onion to taste

cheese slices (we used american)

margerine

 

Beat eggs, milk, salt, pepper and mrs dash in a bowl.  Pour into a skillet with a dab of melted margerine.  pour in chopped tomatoes and onion.  stir with spatula until scrambled eggs are set.  lay cheese slices on top, put on a lid and remove from heat, cheese will melt nicely.  Serve with ketchup or hot sauce.  Yum:)

Sounds delish! I have always been curious how people manage to eat all the eggs their chickens make.
