I have been trying to come up with some ideas for a more frugal menu plan. I am getting 11 laying hens tomorrow and I want to make good use of the eggs. I will be making an egg based meal (eggs for the main dish) 3 days a week, bean dish 1 or 2 nites and tuna based meal 1 night per week. The remaining night will be a meat nite. I want to do the meat nite on sunday and cook either whole chickens, roast beef or ham. Then I could use bits of the leftover meat throughout the week. For the egg dishes I will make scrambled eggs and pancakes one nite, fritta one nite and egg salad or something the third nite. For the bean nites I can put some leftover meat with the beans and some onions and veggies in a crockpot and bake some cornbread. For the tuna there is tuna salad, tuna noodle caserole and my family actually loves broccoli tuna helper. I will try to organize my thoughts on this a little better and actually print out menu plans with recipes, if anyone is interested.
