Help - I need fast, easy, good meals

By dinner time, I’m worn out, and I have little strength to prepare a meal. I use to be able to pull out of my mind fast meals - but not now. Tasha (older daughter) came over last night, I asked her to bring 2 of those frozen pizzas. I have not done this in years, always made pizza from scratch. At times, I don’t feel like eating and Tommy can’t. Tommielynn really needs good meals not cereal and noodles and sandwiches. She is learning to cook, but has not yet master making a whole meal yet. She has been a wonderful help to me.

So I’m asking for fast, easy, good recipes.

A quick and easy meal, this is going to sound strange but it is actually very good is what we call "potato tacos" I know there is an actual Spanish name for them but can't think of it. Anyway's, boil potatoes just like for mashed potatoes, then drain. If you have an onion throw it in while they are boiling, if not its not a biggy. After draining mash with a hand masher. Take a flour tortilla shell (warmed up or steamed) I just throw mine on a skillet to warm up. Put some potatoes in the middle and lots of cheddar cheese. Now what really makes these is if you can get Ortega Mild Taco sauce. If not any type of taco sauce (not salsa) will work. Then you can use the left over potatoes for shepherds pie or potato patties. Also do you use a crock pot/slow cooker? I love mine! I can throw a roast with potatoes and carrots in in the morning and not worry about it till dinner time. Or brown up some hamburger one day and divide in 1/2. One morning throw 1/2 in your slow cooker with beans and tomato juice/whole tomatoes for chili and you have supper. Use the other 1/2 of the browned ground beef one morning in your slow cooker and throw your fixings in for veggie soup. You can cook your meats in the slow cooker such as roast. Throw it in in the morning, put a few inches of water in, and you don't have to worry about it rest of the day. You can then use the meat for beef and noodles or dumplings, reasonably quick meals once the meat is done. You can also shred it for barbeque sandwiches. Also whatever you make, make enough for a couple of days so all that has to be done is to have the meal warmed up.

I know the feeling. Is there a morning you can make some freezer meals? I liek to make either freezer meals or extra large batches of soup, and freeze those into meal-sized portions. Sorry I do not have anything else for you.

Dearest Becky,
I am sorry to hear that things are going so rough. Please know that God said He will never leave you nor forsake you. I know sometimes that is hard to grasp, but reach out and touch His garment. He will guide and provide.
As far as simple meals go--I have several that may help.
*Hamburger tatertot casserole*--put tatertots or finely chopped potatoes, about the depth of a tatertot, in a prepared casserole dish--brown some hamburger, turkey, chicken even pork burgers could be substituted--You may do any type of additives you wish--onions, mushrooms, peppers, corn, greenbeans, carrots, cabbage--whatever is laying around--put the hamburger mixture on top of the potatoes. Now, you can use a Campbell's Cream of soup or you can make your own seasoned white sauce--enough to pour over the top and cover the hamburger mixture. Bake at 350 until done--bubbly.
*Brown rice and lentil stew*-cook lentils as directed using any type of stock or water--put in some brown rice--as much as you wish--add some canned tomatoes, onions, peppers, salt--season as you wish--cumin and chili powder for a chili flavor--curry for an Indian flavor--etc. Simmer until all ingredients are tender. If you want more protein--add some meat--ground turkey is one of our favorites.
*Crockpot Chicken BBQ*--put some chicken in a crockpot with your favorite BBQ sauce recipe--let cook until done--debone and shred--make a simple slaw--put on buns for a sandwhich--
*Hot Weiner Sandwhiches*-This is for your children--it is an easy prepared ahead hot sandwhich that is fun for childre--this adult likes them, too!!--
8 hotdogs
5 hard boiled eggs
6 sweet pickles
1/2 lb sharp chedder cheese
2 medium onions chopped
2 tsp of mayo
2 tsp mustard
salt to taste
Grind all together--mix with a fork
place evenly on 24 hotdog buns
wrap in foil
store in the freezer
When the children are hungry or snacky-simply remove from freezer and place in a 350 degree oven for 20-30 minutes. Now, this recipe was before microwaves. I have stored in freezer bags-removed from bag-wrap in papertowel and microwaved until hot all the way through. This is a simple and easy lunch--add some chips or a bowl of soup and wallah!! A hot meal!

I just had another thought. How is your energy level and time in the mornings? We experimented with having our "big" meal at noon for a few months. I loved it, but we got out of the habit when dh worked away from home for a month, and never got back in. You do all the heavy "dinner" preps in the morning when you are feeling fresh, eat the big meal at noon, and then you have leftovers around "supper" time. plus, clean up is easier in the afternoon than right before bed.
