We had a laid back day! Some wonderful friends of ours cooked us a spaghetti and salad and yummy brownie lunch! The kids swam and played and overall had a great time! Then it was back to our house for a surprise! My brother-in-laws and some good friends of my husbands grilled for me! I didn't make a thing! Well, okay, I did home-made salsa in the "piggy."! (with the mortar and pestle--ours just happens to look like a piggy! ) I added a little diced up avocado in the salsa (green tomatillo--I very very rarely make tomato based) and it was yummy! Spicy enough to that their joke was that I was "enojada" (angry) when I made it! That's what the men say when the salsa turns out really spicy is that the wife was angry when she made it! Ha ha! What a fine joke!
Really, honestly, being served two meals in one day without having to prepare anything has made me quite lazy today! (giggle) I guess I could get used it! No, really I love to cook, just don't seem to always have the time to really enjoy it! My girl Catherine and I had a bake-a-thon this week. We did about 6 loves of bread (sweet breads, banana, cranberry, pumpkin, etc. PLUS a favorite of mine TWO pecan pies from some pecans my neighbor gifted us from her Aunt's pecan tree! I did my own crusts (of course!) and they turned out pretty good and the pie was most yummy! I gave one to my neighbor because she had mentionned she had a hankering for one!
We've been making cheese regulary now and the kids just love it! I haven't made cheese in ages because I felt with the twins, I just couldn't get to it! I posted my farmer's cheese recipe last week and had some follow-up comments about where to get the enzyme. My botttle is from Mexico; however, I did a little research and am going to assume that you could use liquid rennet which is the same thing. Here is a website. Please NOTE: I have never ordered from this company as I receive all my liquid rennet from Mexico. I think it should work just the same. I know some people rely on the "pills" for cheese making, but I have always used liquid and feel comfortable with that. Plus with liquid if you just want to make a batch of 1 gallon of milk for your cheese you can put a very small amount of liquid and it's accomplished much easier than cutting or taking a part of a pill!

Happy cheese making to those who will try! It's absolutely delicious and a must for all you mexican cuisine eaters out there! (enchiladas, tacos, sopes, etc) Plus it's delicious on salads, over eggs, etc!
Duty calls! Diaper doody that is! Plus, the girls are not in my vicinity of the house and that really scares me considering two days ago they got into the vapor rub again--despite it being put away and hidden in my vanity drawer--they grabbed it and had it applied so thickly on their arms and in their hair that they still smell like vapor rub! Of course, they still have colds--you'd think it would have completely erradicated it! Life with twins and 3 under the age of 4 years!!
