• Friday, June 27, 2008 - more gardens,daily goings ons, and easy queso fresco (farmer's cheese)

Well thanks to my dear dear husband and wonderful sons--we have planted yet another garden patch--quite sizable I might add--where the horses used to romp before we moved them by the "barn" with the chickens.  The ground was incredibly packed--despite over a year of lovely manure to help it--but my darling used the pick ax and all of his might and a small tiller to plant another 4 rows of corn, 4 rows of beans--RABBITS STAY OUT--they ate my last 4 rows of beans--but this time the fence will keep you little stinkers out!--plus pumpkins--big and small and some sunflowers just because I had the seed!  I dedicate this garden plot to the Lord and pray that He will have it flourish because so much hardwork, sweat and love were put into it!

Our other gardens are looking marvelous!  Thank you Lord!!!  I just feel such a feeling of contentment going out and weeding--though the other day we were out in the afternoon when it was about 97 degrees--I did feel contentment but bathed in sweat and just wanting to accomplish the task! But in the cool of the mornings, it's quite glorious!  I love sitting on the wooden tree swing my husband put up for the kids--we had two ordinary swings, but one broke,so my husband made the second one out of wood and it's lovely--because my big tushy can fit on it comfortably--wow--if you haven't been on a swing lately--may I suggest you do it?  Such a feeling of yumminess!!!  It made us like kids again--my husband was giggling as he's pushing his wife on the swing and I'm laughing out loud like a kid again!  Just marvelous!  I recommend every wife and husband have one!!!  :)

I made homemade cheese on Tuesday and today is Friday and it's gone.  Of course, chicken mole, rice and beans was for Wednesday's dinner and you just have to have queso fresco for that and last night I made enchiladas and you have to have it for that--plus just in general my kids will eat it with lunch so it's gone!  I will hopefully make some more this afternoon and do a little bread making--sweet ones to freeze and have for breakfast with coffee and/or milk! 

We have some wild blackberries growing and I think we'll go pick the patch that's ready this morning before the birds get them! Blackberry cobbler sounds good! 

That's about all the "goings ons" here!   Here's the easy way I do Farmer's Cheese or Queso Fresco:

1 Gallon of Whole Milk

Salt to taste

1/2 teaspoon (more or less) Enzyme (I use a liquid from Mexico not a "pill")

Warm the milk on medium heat (not any higher or it will burn)

When the milk is warm, but not hot (notice my precise instructions here :)) Add the 1/2 teaspoon of liquid enzyme.

Let sit until milk mixture is firm to touch.

Slowly push milk/cheese down.  The process of dividing curds/whey.  I use a measure cup etc. to spoon the liquid out.  As it's pushed down completely you can tilt the pot to drain the liquid. 

*note:  I have tried this with a cheese cloth and it just didn't work.  My sister-in-law from Mexico taught me to make cheese this way so this is how I know it will work and you won't lose a whole gallon of milk. For some reason queso fresco and cheese cloths just don't work--maybe because the cheese is so soft and crumbly and not a hard cheese.

When the liquid is "squeezed" out, squeeze the cheese to drain it a little more, and put in a dish to continue to drain and firm up.  About 10-20 minutes.  Then drain a little more and put in a dish, add salt, mix well and form cheese into a mold/ball and you're done!

*note:  You can put this cheese into a mold if you have one, if not, I just put it into a cereal bowl and cover with aluminum foil. 

Simple. Easy. Not fancy, but yummy!

You ask me about canning salsa--I do not use the 'inversion' method, I do not feel comfortable with it.When I can my salsa I generally pressure can it...I have used my water bath canner but I feel safer with a pressure canner since the jars can be heated and pressurized at higher temps which helps kill any bacteria. To help with acid levels in your salsa you can add, I believe its a teaspoon of vinegar or lemon juice this will raise the acid level and help inhibit the growth of bacteria...Please let me know if I can help you futher...

The queso sounds yummy! Where do you get the liquid enzyme - is it at a regular grocery store? I want to try making this - would the tablets work? Thanks for sharing!!

Thank you for visiting my blog and leaving a note. I don't know about whether or not I have a good blog, but I try :o) I share 'me' for whatever it's worth (LOL...some days it might be worth something, other days it's not!)

Great recipe here -- thank you for sharing it! I can't wait to try it out.. Where do I find the enzyme liquid.....
