Canning

I decided to do something new today.  I made turkey & noodle soup for dinner, which is one of my favorites - but when I make it, I tend to make way more than my family can endure to eat.  This has always been nice as there is always someone - a new neighbor, someone at church who is sick, or just somebody who needs some TLC to take some of the extra soup to.  It is so hearty and warm, and nourishing.  Anyway, since we have moved, I haven't really established those kinds of relationships with anyone to know who needs what - and after watching a lengthy documentary about "The Future of Food" on Susan Godfrey's blog yesterday, I have decided that I am going to jump into gardening, canning and homesteading with both feet.  (Thus the new interest in this blog that I created a while ago - and the community here.)  I always have canning jars, so I took two pints down from the cabinet and ladeled the hot soup into them, added lids and rings, and then gave them a boiling water bath.   The lids actually "set" (or whatever you call it when they suck in and make that "POP" sound) and I was so thrilled.  My son and I like to have hot soup for lunch, etc. so after we are not tired from the two nights of dinners we will eat with the fresh soup, I will have two nice jars to open at different days for he and I to share.  (My girls like it too - but it is one of his favorites!)

I also always make way too much food when I make soup or beans. I never thought of canning it! I've always put the leftovers either back in the fridge (to haunt us day by day until we finish it) or in a freezer bag to freeze. Next time, I think I'll get my canning stuff down and try it. Great idea!

Hey Julie,

I thought I would come and check out your Homestead blog. I am interested in checking out other ones too. Tav and I have been feeling a tug to start doing more things on our own. I have started making bread (again and again) I even have gotten Tayva to make some for us. We want to start up a nice pantry (Tav is even willing to give up some of his garage!!) We are also talking about trying a garden this year with Buster & Jeanette. That seems overwhelming to me and I keep telling myself SMALL. I love to can and have done it for years with my fruits and jams. I am scared of the pressure cooker. I have never really used it, but I'm sure I can give it a try. My biggest fear is not doing it right and giving my family botulism. We have even discussed rebuilding the hen house and trying some chickens. Tayva is concerned about foxes getting to them. But I'mnot sure if she is worried about the chickens or her dogs. Anyway. I have comment diarriah. Sorry!

I\'m so sorry to but in and be a bearer of bad news. But you NEED to pressure can things like turkey noodle soup. I haven\'t actually canned much myself but read a lot about it and for things lower in acid pressure canning is a must. Now I have a recipie for cream of tomato soup base that can be water-bath canned (because you don\'t add the milk till you eat it). Good luck with your canning. Maybe I\'ll get off my own fannie and can something!

Howdy, you scored high on a google of "canning leftovers"... And only a week old, so figured I'd say hi.

I'm currently researching can-ability of leftovers, I also make much more than enough. My leftovers, and delivery service to parents, has been named "Meals On Wheels".

I'd love to take them some nice room temperature jars rather than the current frozen gallon bags. I have a bath canner, but not a pressure canner. Have read on a few sites needing the pressure rig... Adding lemon juice may address the acidity issue, but then you might be killing flavor of the meal.

Still researching, will stop back.
