I am trying a recipe out of GooseBerry Patch Cookbook.....
This is an oldie but goodie I think and so I thought I would revive it here with my family.
Most of you ladies probably make this alot and some may think this is an easy fix. I am listing it here today for those of you who are new to cooking and /or you have heard your husband talk about this from his past but because you are a "city girl" you really didn't know how to make it. That was me 19 years ago. I was raised in the south and my husband alittle north in the country and I had no idea how to make this dish!! So here is to REVIVING great old comfort dishes from our past!
Quick & Easy Shepherd's Pie
1-1/4 lb. ground beef
1 onion, chopped
8oz. can tomato sauce
8oz. can green beans, drained
8oz. can corn, drained
1/4 t. cumin
1/2 t. garlic powder
1/4 t. salt
1-lb mashed potatoes
1 egg, beaten
2-1/2 c. shredded Monterey Jack cheese, divided
Brown the beef w/ onions; drain. Stir in tomato sauce, green beans, corn, cumin, garlic powder and salt; simmer while preparing mashed potatoes (if needed, I sometimes have left over from the night before.) In a separate mixing bowl, combine egg and 2 cups cheese; spread in the bottom of a lightly greased 8x8 baking pan. Spoon meat mixture over the cheese; spread potatoes on top. Sprinkle with remaining cheese; bake at 375 degrees for 20 to 30 minutes. Let stand 5 minutes before serving. Makes 9 servings.
I double this for my family.
Enjoy !
