More Summer Recipes.....
FRIED GREEN TOMATOES

3 med green tomatoes
1/4 c cornmeal
1/4 c Parmesan cheese
2 tbsp all purpose flour
3/4 tsp garlic salt
1/2 tsp dried oregano
1/8 tsp pepper
1 egg, beaten
1/4 c veg. oil
Salt
Slice the tomatoes 1/4 in thick. Lightly sprinkle tomatoes with salt. Drain on paper towels for 30 to 60 minutes. Meanwhile, combine cornmeal, Parmesan cheese, flour, garlic salt oregano and pepper in a shallow plate or dish. Dip each tomato slice into the egg, then the cornmeal mixture. In a medium skillet, heat oil over medium high. Fry tomatoes a few at a time for 2 minutes per side or until golden brown. Drain on a paper towel and serve immediately.

Old Fashioned Lemonade
6 lemons
1 1/2 c sugar
2 1/2 qts. ice water
Wash lemons; slice thin. Place in a stainless or enamel flat container. Add sugar. Pound with mallet to squeeze juice from lemon rings. Stir to make syrup. Let stand 20 minutes. Add water to pitcher after putting in beaten lemons. Stir well. Serve within 6 hours.

A Change in my Menu .....
If you have been reading along with me with my menu on the sidebar, I have changed my item for supper tonight.
I am going with the Crock-Pot Black Bean Chicken and I have listed the recipe below.

A Great Summer Recipe !!!
CrockPot Black Bean Chicken
16oz jar of Salsa
2 large chicken breast
1 can pinto beans, drained
1 can black beans, drained
1 can corn, drained
1 can Rotel, undrained
Spray a large crock-pot for easy clean-up. Put the black beans, corn and half of the salsa in the bottom of the pot. Put the chicken in next (frozen is fine). Top with pinto beans, Rotel and rest of salsa. Cook on low all day or high for 3-4 hours. When chicken is cooked, remove from crock-pot and shred with two forks. Put shredded chicken back into crock-pot and mix with other ingredient thoroughly.
Serve over chopped lettuce with tomatoes, sour cream, cheese and tortilla chips. This can also be served over rice or rolled up in tortillas. Yields about 8 cups.
( I used frozen corn and I don’t like to use can beans, so I prepare my beans first and then use in the recipe.)
I also double this recipe for my family and to have left overs for the next days lunch.

Finding TIme to Post Again....

Don't you love that picture? Just a simple way of life.....
That is what I have been up to. Just a simple way of life. I have been here at HSB visiting around and checking on friends, old and new, but just had nothing to post about here on my blog.
We are some-what on our way to a summer break, but really, what is a "summer break" ? DO you feel like you are on "break"? We don't. There is so much to do, work or fun alike. But, for what the world calls it, we are on a "small Summer break" !! There I said it...........
As far as homeschooling, we homeschool all year round. We don't have to, but it just works out that way. We like it and so, why change it. SO that brings us to where we are right now. We are doing some school work, but on a very relaxed schedule. If we do not have somewhere to go, I let the girls sleep in and then we do a little bit of school work. I mean, there is not need to just sit around and stare at each other.
We are already having some HOT temps around here !! This whole week we will be above 90 !! So, we have a lot of time in the house in the middle of the day. What is good is that around late afternoon, early evening, there is still some wind blowing, and we are able to go outside to find something to do.
Well this is enough about nothing for now. I have a few other things to post about that I will take time to do later today.
