It seems the sickies are making their rounds! We've been beaten down in the middle of their path. Chances are your family has been touched by this go-everywhere virus, too. The wonders of garlic have been touted by many. It's proven that resistance is increased and immunity improved with the use of it. Why not enjoy your medicine? The next time a "bug" has thumped you down, try this: GARLIC SOUP
INGREDIENTS: 1/4 cup butter 1 large head garlic, cloves separated, peeled, chopped (or crushed) 3 TBLSP flour 3 cups chicken broth 1/2-1 cup tortellini, cooked 1 can water chestnuts DIRECTIONS: Melt butter in soup pan, saute garlic a few minutes, add flour and make a paste.Add broth, bring to a boil, add tortellini and water chestnuts, turn down, simmer for half an hour. For color and an oriental touch, you may add a few pieces of spinach and a dash of Chinese five-spice powder, if desired. Slivered chicken goes well in this too. (From: "The Frugal Family Kitchen Book" by Mary Webber) Pictured above: our soup is garnished with chives. Mmmm!
