You'll have to try this cabbage salad and tell me if you agree that it's got a wonderful taste and delicious crunch! My mother-in-law had us over for lunch one evening, some months back. One of the things she served was a cabbage salad from a deli that we really enjoyed. I experimented at home and was able to make my own. It's now a family favorite. If you don't care for coleslaw, you might just like this cabbage salad! It's not your usual slaw! We had this alongside today's lunch. My 6 year old daughter was up on a stool helping me wash the vegetables, stir together ingredients, and perform other important tasks. When it came time to heat the sauce on the stovetop, I observed carefully as she stirred the pan. "It smells like it's hot now, mom!" she told me happily. "Can we add it?" Get your children involved in the cooking, if you have some at home. They'll be even more eager to eat the fixings! After all, they "helped make it"! CABBAGE SALAD
Ingredients: 6-8 cups shredded cabbage 2-3 carrots, shredded 1 cup water 1 cup vinegar 1 onion, chopped 3/4 cup granulated sugar 1/4 tsp salt 1/8 tsp pepper 1 tblsp celery seed Directions: In large salad bowl, toss together cabbage and carrots. In a small saucepan, heat together last seven ingredients until steaming (just before boiling). Pour hot sauce over cabbage mixture and stir until completely coated. Cover and refrigerate for at least an hour before serving. Most flavorful if allowed to chill several hours or overnight. |
