Homemade ice cream anyone?
Here are three different recipes for you. Yeah, I know, it isn't really the season for homemade ice cream but Sister Brenda is looking for some recipes. Besides, we made two batches over the weekend because of the birthday parties! So, here ya go. All of these are for our 6 qt freezer.
#1 Vanilla Ice Cream
This is our favorite but definitely not good for the waistline 
4 eggs
3 Tbsp vanilla
1 cup sugar
1/8 tsp salt
1/2 pt of whipping cream
2 cans sweetened condensed milk
milk
Beat the first 5 ingredients well, pour into can and the add sweetened condensed milk. Stir just a little and then fill to your fill line with milk. Mix and enjoy!
#2 Vanilla Ice Cream
8 eggs
2 cups sugar
4 Tbsp vanilla
1-2 cans of milnot (evaporated milk)
milk
Blend first 3 ingredients until well blended and then add the milnot and mix again. Pour into freezer and add milk to the fill line. Mix and enjoy!
#3 Milky Way Ice Cream - here is your special treat
5 regular size milky way candy bars
1 can sweetened condensed milk
10 oz marshmallows
milk
Melt first 3 ingredients and mix well (it will be really sticky). Pour into freezer and fill to fill line with milk. Mix and enjoy! A friend of mine did use snickers candy bars but I suggest making sure the chunks are small if you do that.

What we had for supper tonight....
I thought I would post the recipe for what we had for supper tonight, ham and potato casserole. This is one of my hubby's favorite meals!
This recipe is from the bag my potatoes came in a long time ago, provided by San Luis Valley Potato Administrative Committee.
8 medium potatoes, peeled and cubed
1/2 c sliced mushrooms (I never add these, yuck!)
1/4 c diced onion
3/4 soup can filled with milk
1 c grated cheddar cheese
1 c. chopped ham
1 can cream of mushroom soup
Boil potatoes until tender. Combine mushrooms, onion, milk, cheese, soup and heat. Cook and stir ten minutes. Add drained potatoes and combine thoroughly with sauce. Pour into baking dish and sprinkle with a little more cheese on top. Bake at 350 for 20 minutes in a 8x12 in glass baking dish.
*******Okay, that is how the recipe is provided. I use a pan on the stove to heat the sauce that can go directly into the oven, not glass and not 8x12. I also don't measure my onions, cheese or ham - just use whatever I think or have. Tonight I used ham leftover from the ham I baked yesterday. (I will use the rest for ham'n beans this weekend). It is so yummy and easy. Please let me know if you try it and what you think.

FINALLY - I have butter!!!
I think I know what the problems was, I had gotten some milk in with the cream. I tried to skim just the cream off the top but I think I had gotten some milk in with it by accident. After it started thickening a little, I poured some of the liquid off and then mixed again, I did that twice and finally it turned to butter! Yeah!! Now, I am making some bread so we can taste the butter later. Thank you for all of the help on my last post.
As a side note, I am feeling better - I just pray I stay that way. Thank you again for all of the prayers.

What is healthy anyway????????
Oh, I am getting so frustrated in my search for the healthiest diet for my family. Every book I read sounds very convincing that it has the right plan to a healthy diet, until I read the next book! I really want us to eat healthier but I refuse to count calories and low fat is not always a good thing. We like our meat and potatoes which put a damper on food combining properly. Agghhh........... Okay, here is what I do believe:
1. foods are healthiest in their most natural state
2. I believe some fats are needed in our bodies and that we just have to choose the healthiest ones, I choose butter over margarine and olive oil over vegetable oil
3. I believe that fruits and veggies are good for us if free from pesticides and harmful chemicals
4. I believe God gave us certain foods for our good, in my opinion that includes meat and dairy: once again it should be free from harmful chemicals and unpasteurized (dairy)
5. I believe water is good for you (I just have to make myself drink more of it)
6. I believe sugar, sugar substitutes (chemicals) and white flour are terribly bad for you and do more harm than good
Okay, now here are some things I am confused about. I do believe in some of the principles of food combining because I felt the difference it made in me, but to what extent am I to take it? What about the meats God listed in the Old Testament as unclean? Am I free to eat those because I live by the new covenant not the old or is it still applicable to me today? Is there any truth to the belief that fermented and sprouted foods are extremely healthy for you? There are so many opinions out there, it is so hard to distinguish the truth from peoples opinions sometimes. I just keep praying that God will lead me in what he would have us to eat to become healthier and live the lives He has planned for us. I do believe we are not eating as healthy as we could be and that our health could be improved, I just need to figure out how.

Question about raw milk
Oh my goodness, you all were right and it was YUMMY!!!! Oh, so rich and creamy. I am going to go fix myself another glass, my oldest ds wouldn't stay out of my first glass! I will definitely be getting more, so I have a couple questions for you.
1. Can I freeze it? Will it still taste the same when it thaws? I want to be able to get more than one gallon at a time to save gas expenses but I don't want it to go to waste.
2. How long will raw milk generally last in the fridge?
3. Do you have recipes that you would share with me about making butter or ice cream with the cream?
I have it in a big gallong jar, the kind with a small opening and a little round handle (remind me of a moonshine jug) and when I went to get some after it has sat all day, it had a good two inches (at least) of cream on top. OH YUMM!!!!!!
Hmm.........wonder how much a milk cow would cost me????????

PS.. Thank you to all that commented on my last post and let me know I was getting a good deal. The farm is about 20-25 miles from my house but alot of things are that far when you live in the country, so I don't mind the drive.

Raw, unpasteurized milk!!!!
Yesterday I discovered there is a farm nearby that sells raw, unpasteurized guernsey milk. I am going tomorrow to buy a gallon! I am so excited to try it . Here is what their website says.
We have all natural grass fed (no grain) raw milk available. Milk from cows that are not fed grain is known to have a higher level of healthful nutrients such as CLA and Omega 3’.
You’ll notice the milk from our cows is slightly golden with a good amount of cream. If you’ve never had the pleasure of drinking an ice-cold glass of milk that was poured after having an inch or two of rich, risen cream stirred back in, you missed one of life’s great pleasures. In fact, we have an ongoing battle in the house about stirring the cream back into the milk for drinking, or skimming it off for coffee cream (and of course butter and home made ice cream.)
Many people don’t know that raw milk, especially raw milk from grass fed cows, is very healthy for us. Pasteurization and homogenization destroy many of the natural health benefits of milk. When the milk comes from cows that eat only grass and forage but no grain, the milk also has higher levels of CLA and Omega 3’s. Many people that have had milk allergies in the past find that they can tolerate raw milk very well. It is truly one of God’s greatest food gifts to us.
They charge $5 a gallon and I didn't think that was too bad considering I paid $3.87 for a 1/2 gallon of organic milk at the grocery store. I will be sure to post and let you know if we like it or not. If we really like it, I may have to invest in a milk cow

Food combining and winter preparedness
Woo-hoo, we still have power!! I wanted to share with you how our food combining is going and a setback I had. Dh is doing great!! I have been packing him a lunchbox everyday with lunch and some snacks and he has been drinking quite a bit of water. He used to drink alot of pepsi and stopped that over a week ago, I am so glad he decided to give that up. We both weighed and he measured Monday morning and then again this morning;since Monday, he has lost 4 pounds and 1/2 an inch around the middle and I lost 1 pound. I measured this morning but didn't Monday so I don't know about that. He had weighed a few days before Monday and told me Monday that he had lost 5 pounds then!! That is a total of 9lbs for him! I probably would have done better had I not gone to McDonalds yesterday . (I will tell you more about that in a minute) I haven't lost as much weight but then again, I don't have as much to lose either. I really can tell a difference in how I am feeling though. I haven't been having any stomach troubles since properly combining my foods and I have had an increase in energy. I haven't been near as tired and I wake up much easier. Well, until yesterday and my McD meal blew that, I had a little bit of stomach trouble last night, didn't sleep good and didn't want to get out of bed this morning. We also had a heavy dinner last night because I combined two proteins, so that didn't help anything either. I will be flushing my system today with lots of water and fruit! I am amazed at what a difference just eating certains foods together or not eating certain foods together can make! I haven't felt hungry at all (dh said he has but that is my fault for not packing enough food, I have tried to fix that). The kids are eating better too because I haven't been keeping bad snacks around and we all start our day off with fruit, as much as they want. I will keep you posted on how we are doing and our meals. Dh ordered another scale for us, ours is bad and has to be set at 9lbs to weigh correctly, so he ordered us a digital one through his work. It should be in today. That will make it easier to track our weight.
I wasn't as prepared as I thought I was for the electricity being out, my little burner thing wouldn't work so I had no way of cooking anything. I was out of bread and couldn't bake any. I didn't have anything thawed to grill and I was tired of sitting in a dimly lit house, so we went to town. We went to the library to get some movies to watch on the portable DVD, then to McDonalds (inside walmart) and then did some shopping and got more fruit, a loaf of bread and a few other things to get us through. It just killed me to have to buy bread! Well, we stopped by my sis in laws on the way home and the kids ended up staying there while I headed on home and by the time I got home, our power was on!! Yippee!!! So, I got busy and made 4 loaves of bread, did some laundry, got more water stored up and a few other things. Then I went and got the kids, came home and fixed supper.
Our meals for yesterday and today:
breakfast:fruit
lunch: ramen noodles for dh, mcd's for us
dinner:bacon and eggs
breakfast:fruit (kids are having bread, butter and jelly)
lunch: bacon, cheese, onion wrapped in leaf lettuce (I will skip the cheese, kids will have theirs with bread)
dinner: chicken noodle soup (no actual chicken meat in it)
snacks are fruit, salad, veggies and dip, chips and salsa
I am also upping my water today because I have been slacking in this area. I plan to print a food journal today so I can keep better track, I know it helps me to realize what works and what doesn't.
