New Recipe: Hearty Chicken & Noodle Casserole

Last night’s menu- trying a new dish. The family loved it (even with my oops!) and so it goes in the recipe box.

Hearty Chicken & Noodle Casserole
1 can cream of mushroom soup
½ cup milk
¼ cup Parmesan Cheese
1 cup frozen mixed vegetables
2 cups cubed cooked chicken
2 cups egg noodles, cooked and drained
½ cup shredded cheddar cheese
Stir soup, milk, Parmesan cheese, vegetables, chicken and cooked noodles together in a casserole dish. Bake at 400 degrees for 25 minutes or until hot. Stir.
Top with Cheddar cheese.
This recipe is from Campbell’s. I made it last night with an oops- first Maiden and I didn’t cook enough noodles (2 cups dry is not 2 cups cooked) so we cooked some more noodles which ended up being a 1 ½ more than needed but not wanting to waste we stirred in the extra noodles any way. To compensate- I put in about a cup of chicken gravy that we had left over in the freezer. Then Maiden stirred the cheddar cheese right into the casserole instead of sprinkling it on top. Good news is- It tasted just fine and with using more noodles we were able to stretch the recipe a bit farther.
Cost Breakdown: can of soup 47 cents (Aldi’s), Parmesan cheese approx. 45 cents (not sure), veggies 45 cents, cooked chicken (2 breasts @ 74 cents each) $1.48, milk 9 cents, noodles (remember I used more- purchased on sale @ Meijer) 50 cents, cheddar cheese 44 cents (Aldi’s).
Total Cost: $3.88

Sounds yummy....
We could never get food for some of the prices you list in my area. All canned soup is nearly a dollar :o( ......It is really amazing how regions differ.
