Meals-to-go

Being the hospitality coordinator for my MOPS [Mothers Of Preschoolers] group- one of my jobs is coordinating meals for mommies who need them. With all that “knowledge” under my belt- I have also ended up coordinating necessary meals within my homeschool group (we are a small close knit group and reach out to each other as needed- and often). Coordinating meals means putting yourself on the list too. So, with that said, I have a tried and true menu plan that I pretty much stick to for meals for others. That was until I decided to do something different . . . .
First- allow me to share my easy-peasy meal for others:
Ham, sliced (cooked in my crockpot)
salad and bottle of dressing (mixed greens, carrots, tomato)
h’made bread, sliced
Triple Fudge Brownies
I put the ham, salad and brownies in disposable aluminum pans with those nifty clear plastic lids. I usually send a bottle of Ranch Dressing as that seems to be everyone’s favorite.
This time:
Instead of ham, I made a yummy new recipe, One-pan Chicken and Potato Bake. Why the change? #1- I’ve got oodles and caboodles of potatoes, #2- I was cooking for a crowd (her mom and sisters too) and this recipe was super easy to double without a high cost. Instead of my famous triple fudge brownies, Maiden made a double batch of cream cheese brownies (out of a box)- so we had some to share and some to keep. We also added a jar of Mr. Steady’s Cukes (homemade pickles really).
Here’s what we sent (brownies not pictured):

 

 


Notice I also added a bag of croutons and a 2nd bottle of dressing- the chicken recipe calls for Zesty Italian Dressing and it only used half the bottle- so I gave the rest to my friend.
Wondering what this cost?
One-pan Chicken and Potato Bake- 5 chicken quarters $2.05, Zesty Italian dressing $1.46, potatoes-free
Salad- $3.52 (mixed leaf lettuce in with a more expense bagged salad mix and added tomatoes and cukes from our garden)
Misc: Ranch Dressing $1.24, croutons $.96
Mr. Steady’s cukes: free
Brownies: $2.00 (2 mixes purchased on sale for $1 each)
Total Cost of dinner: $11.23
This is a bit more expensive than normal but the meal needed to feed 4-5 adults and 5 children.

That looks wonderful! I'm the hospitality coordinator for my MOPS group as well. In years past, we had a Care Team doing the meals, but we branched off this year and I'm part of the smaller new group, so for now, I hold both positions. I'm going to write this meal down for when it's my turn!! Thanks!

My Husband (DH)-
Mr. Steady

My rock and biggest supporter. The glue that keeps the family sane. He is like deep, deep water- it takes a lot to see a ripple.

DD12- Our Maiden in Waiting- By the world's standard she's a 'tween'. By ours and the Lord's- this is the time of her years of preparation. She is eagerly learning what it means to keep a home and daily becomes more and more of a helper to her Mama.

DD9- Sassafras My Sassy middle child. She holds her own so sweetly and has such an empathetic heart. While real Sassafras is used for flavoring- She is that added sweet flavor to our family.

DS5- Mr. Conductor- The train aficionado in the family. He's the little man and best helper around! He's also the biggest Oreo fiend in the family.
