Maiden's Crockpot Mac & Cheese

Maiden’s Crockpot Macaroni & Cheese
8 oz. cooked macaroni
3 cups grated cheddar cheese
1 ½ cups milk
2 eggs, beaten
¼ cup melted butter
1 tsp. salt
pinch of pepper
1- 12 oz. can evaporated milk

Grease your crockpot with 2 Tbsp. of shortening. Add the above ingredients to the crockpot and mix with stirring spoon. Cook on LOW for 3 ½ to 4 hours. Sprinkle top of mixture with some extra cheese. Turn off crockpot and let stand for 10 minutes. Serve hot. Recipe found in Marmee’s Kitchen Primer

The first time we made this recipe Maiden and I looked at 8 oz of noodles and thought there was no way that was enough to feed our family of 5. So we doubled the recipe. Wowzers! It all fit nicely in our oval crockpot but made enough for a crowd! Doubling would be great for company or larger families but we were eating mac and cheese for a week!
Here’s the cost breakdown:
Note: all items purchased at Aldi’s unless noted otherwise.

8 oz. macaroni 24 cents
3 cups Cheddar cheese $2.25
Milk (2.29/gal) 21 cents
Eggs 14 cents (special sale at another store)
Butter 25 cents
Evaporated milk 49 cents
Total cost: $3.58
Served with sausage purchased for $1.69
Total Cost for Meal (w/o beverage): $5.27

So, how much does a recipe make?

Just curious as to how much doubling made or what a half recipe makes. Wondering if it would be enough for a family of 6. What size crockpot did you use? I am looking for more crockpot recipes like this... thanks for sharing!

My rock and biggest supporter. The glue that keeps the family sane. He is like deep, deep water- it takes a lot to see a ripple.

DD11- Our Maiden in Waiting- By the world's standard she's a 'tween'. By ours and the Lord's- this is the time of her years of preparation. She is eagerly learning what it means to keep a home and daily becomes more and more of a helper to her Mama.

DD8- Sassafras My Sassy middle child. She holds her own so sweetly and has such an empathetic heart. While real Sassafras is used for flavoring- She is that added spice of flavor to our family.

DS4- Mr. Conductor- The train aficionado in the family. He likes to think he's in charge and often is! He's also the biggest Oreo fiend in the family.
