Spoonbread

I think just about everyone has their own version of spoonbread. Mine has been passed down in my DH’s family. I now must bring it to all big family gatherings on my side- it’s a big hit. So, in honor of my MIL Rosemary Wagner . . . .

Spoonbread

2 eggs beaten

1 pkg corn muffin mix (Jiffy 6)

1 stick melted butter (1/2 pound)

1 cup sour cream

1 can whole kernel corn (drained)

1 can creamed corn

2 cups shredded cheese (I use Colby Jack)

350 degree oven. Mix all ingredients together except cheese and pour into a greased casserole dish. Bake for 30 minutes then cover with shredded cheese and bake 10 minutes more.

I am working on a recipe scrapbook for my DDs hope chests- I just had the thought that I should get my MIL to write this one out in her own hand for me. It will go in the girls books with a photo of Gramma and a little write up about the background of the recipe . . . .
