Whole Wheat bread recipes

My two favorite wheat bread recipes: the first one is our favorite regular recipe and makes a wonderful soft dough that is easy to shape and has a delicious honey wheat flavor. If I am out of milk or eggs, I can use the second recipe, which is quite similar.

           BROWN BREAD

6 C. scalded milk                   2 1/2 T. dry yeast dissolved in

3/4 C. honey                               1 C. warm water

1 C. canola oil                        8 C. wheat flour (approx.)

2 1/2 T. salt                            8-10 C. occident flour (approx.)

3 eggs

Combine first 4 ingredients and cool to lukewarm. Add yeast mixture and eggs. Stir in wheat flour. Let rest 30 minutes. Add remaining flour and knead until soft and springy. Place in large oiled bowl, cover and let rise until double; then punch down and let rise till double again. Punch down and form into 5 loaves (I use 4 large pans and one medium one); cover and let rise till double. Bake at 350 degrees for 45 minutes.

          WHEAT BREAD

6 C. warm water                   2T. yeast softened in

1C. veg. oil                             3/4 C. warm water

1 C. honey                            9 C. whole wheat flour

2 2/3 T. salt                           8+ C. occident flour

Mix together water, oil, honey and salt. Stir into this mixture the whole wheat flour. Add yeast mixture and remaining flour to make a stiff dough. Cover, and let rise until double; punch down and let rise again. Punch down and form into 4 lg. loaves. Let rise. Bake at 425 degrees for 15 minutes and then at 325 degrees 15 minutes. Brush tops with butter.

occident flour

Occident flour is made from hard spring wheat and is basically bread flour and has a higher gluten content. Extra gluten helps hold gas bubbles produced by yeast, making a higher, lighter bread.
