Hinds Feet on High Places

You'll LOVE this cake :)

              ~Greetings from our PA mountain homestead~

I just popped one of these into the oven.  This delicious counterpart to shoo-fly pie is especially enjoyed with a cold glass of fresh milk or a hot cup of coffee. Molasses, or shoo-fly cake is a PA Dutch recipe and has been a cold weather favorite of our family for as long as I can remember-thought you might like to try it!

                                       SHOO-FLY CAKE

4 C. flour

3/4 C. shortening

2 C. brown sugar

1 t. salt

Mix these ingredients to make crumbs. Save one cup for topping.

Then mix together these three ingredients:

1 C. molasses (sorghum)

2 t. baking soda

2 C. hot water

Add to remaining crumbs and mix well. Sprinkle with reserved crumbs. Bake at 350 degrees in oiled 9 x 13 baking pan for 35-40 minutes. A very moist cake!

I just copied the recipe. I live on a sugar cane plantation and have all the molasses I need. lol I will be trying this recipe very soon.
