Zucchini Relish

            ~Greetings from our PA mountain homestead~

What to do with all that zucchini? Here is a great recipe I think you will enjoy. It has been a favorite of our family for years. It always gets rave reviews when I take a jar along to a picnic.

                          ~ zucchini relish~

10 c. grated zucchini   

 4c. ground onion        

 5T. salt        

Mix these together and let sit overnight. Rinse 2 or 3 times and drain well. (Cucumbers can be mixed in if *gasp* you don't have enough zucchini, or just have a couple that need to be used up.)                

                                     

Then mix in large kettle:

2  3/4 C. vinegar          4 T. cornstarch

6 C. sugar                     1 t. turmeric

1 t. nutmeg                   2 green peppers, chopped

2 t. celery seed              1/4-1/2 t. black pepper

Add zucchini and onions. Bring to a boil and simmer for 20 minutes. Prepare jars and lids. Pour boiling hot relish into jars, wipe rim and seal immediately. It is recommended that the jars be inverted for 15-20 minutes. Let cool away from drafts or cover with a cloth. Makes 5-6 pints.
