Made my first batch of cheese

     On Saturday I made my first batch of cheese, following the details of the instructions given on this page: http://biology.clc.uc.edu/fankhauser/Cheese/Cheese_5_gallons/CHEESE_5gal_00.htm

Everything was pretty simple and straightforward except the pouring off the whey part. Most of it turned out to be whey. There was so much that I had to find more pails to pour it into and keep straining the curds, so I had a lot of stockpots and milking pails to wash. Next time I will strain it with a real (large) milk strainer instead of a colander. That should work better.

 I have a wheel of cheese on a salad plate curing; it probably weighs about 4 pounds. I guess we will have to wait a month to see how it turned out. Right now it is like cream cheese. I tried using the whey to make ricotta but nothing happened, so I dumped it out.

Maybe next time I will try a smaller recipe for a simpler cheese. We have so much milk that we could make a lot of cheese to be ready for eating this winter.

I so desperately want to make cheese and i have NO MILK! I bet it'll be yummy!

Lucky you! I would love to have the opportunity to try to make cheese. I bet it was an experience and that it will turn out wonderful.
