Elderberry Jelly

Today I made six batches of elderberry jelly, which amounted to 23 pints. Hopefully this will last the year, since we ran out very early with the supply we made last year. A friend gave me the idea of adding apple juice, saying that it was even better that way and added pectin to the jelling process. So I added 2 quarts of apple juice to my 10 quarts of elderberry juice. I think we should try making wine next time!  

Tonight my hubby and some of the kids went to a h.s. football scrimmage, and I am getting ready to go milk the goats and do evening chores...then I might start a batch of cheese-my first batch ever, to be exact. Will have to report on how THAT goes. I would like to make a hard cheese, but we'll see once I look at my recipes one more time. Summer vacation is officially over as we plan to start back to school on Monday, UNLESS we have a few buckets of tomatoes to can, then it may have to wait a day. I need to get on homeschoolblogger and post some there as I get my daily routine and assignments down.

The apple juice was a good addition to the recipe, just as my friend said it would be. We are all happy to have so much this year as last year we ran out in January :(

I admire you! I don't trust myself enough to pick those kind of wild berries! I know we must have them around here somewhere? And the yogurt! All summer long I said I wanted to try some, but it sounds to time consuming to be checking the temps all day. Maybe when I am stuck in the house I will try your way of making it.
How many people bug you for fudge now you have goats? I laugh as my recipe only takes 3/4 c milk. (but 2 c. sugar!) They think it takes so much milk!
